The basic idea seems to be that all the flavors / ingredients of a taco are wrapped in a big crispy tortilla; a 'taco' in a more convenient and on-the-go form that you can easily eat with one hand while on the go. This recipe starts with large tortillas, the largest one I can find is 12 inches, and even they are not quite large enough when folded together, so I add another small tortilla to the side that is folded up, and this allows for larger wraps. The remaining ingredients are your favorite taco fillings and I like to go with taco seasoning, ground beef, nacho sauce, salad, tomato, cheese and sour cream. When the tortillas are filled and wrapped, they are either fried in a pan until crispy on the outside or baked in an oven until crispy! These crunch wraps are actually pretty easy to make, especially if you make the spicy beef and cheese sauce the day before, and they taste great! Perfect for Cinco de Mayo!

  • 8 (4 inch) tortillas (gluten-free to gluten-free)
  • 4 (12 inch) tortillas (gluten free to gluten free)
  • 1 pound of taco seasoned beef
  • 2 cups of nacho sauce
  • 2 cups salad, shredded
  • 1 cup tomatoes, cubes
  • 1 cup cheddar cheese, shredded
  • 4 tablespoons cream fraiche
directions
  1. Heat a little oil in a frying pan on medium heat, add a small tortilla and fry until light golden brown on both sides, approx. 1-2 minutes per Page before putting paper towels aside. Repeat for another 3 (a total of 4) small tortillas.
  2. Lay a large tortilla down, place 1/4 of the beef in the middle of the tortilla in a thin layer, top with 1/4 on the cheese sauce, 1 of the crunchy / fried tortillas, 1/4 of the salad, tomatoes, cheese and cream fraiche followed by a small unfried tortilla.
  3. Fold the sides of the large tortilla close over the small tortilla, place in a frying pan, with the folded side down, and cook over medium heat until slightly golden brown, about 3-5 minutes, before turning over and cooking the other side. . Repeat for the remaining 3 crunch wraps.

Possibility: Bake the crunch packs in an oven on a baking sheet at 375F until golden brown, approx. 15-20 minutes. Tip: Make beef, cheese sauce and fry the 4 small tortillas the day before.
