Oh my gosh guys! I am really obsessed with these little cheese bites! This recipe was another brain of my wandering the aisles of the grocery store late at night, hungry.

Why do I always end up at the supermarket when I'm bored? I need a life.

But on the other hand, it helps me make these deliciously delicious sandwiches… so… winning hashtag!

Anyway, with the football season in full swing, I'm always looking for the best to serve during games. I have something for cheese and fries, so I thought, why not combine the two!

Nachos have been made before. So this is like a reverse nacho!

I took some Doritos of nacho cheese, crushed them and used them as a layer to cover some Mexican Velveeta cheese. That's the type of cheese peppers have, so it tastes the same as cheese, right out of the box.

All that gooey, gooey cheese is just calling you!

I am sure you can bake them in the oven if you are not interested in frying them.

In fact, I reheated those already fried in the oven for when we had company and they were great. I will put instructions on how to do it in the recipe below.

Crispy cheese

These cheesy crunchy Bites Cheese are like nachos from the inside out! Crunchy omelette that covers a filling of melted lava cheese that you can put in your mouth and enjoy!

Ingredients

  • Vegetable or canola oil for frying
  • 1 cup finely crushed nacho cheese tortilla chips
  • 1 cup breadcrumbs
  • 16 ounces. Mexican Velveeta cheese, diced into small pieces
  • 3 eggs, lightly beaten
  • 1 1/2 cups of flour
  • 1 tablespoon of freshly chopped parsley to decorate

Instructions

  1. Heat oil in a heavy-bottomed pot or deep fryer to 350 degrees F.
  2. Combine the finely minced nacho cheese tortilla chips with panic breadcrumbs in a shallow bowl and set aside. Place the lightly beaten eggs in another shallow dish and the flour in another shallow dish. You should have three separate plates lined up and ready to use.
  3. Take each cheese cube and dip it in the egg, then top it with flour, then dip it in the egg once more, followed by the breadcrumb mixture. Place the cheese cubes on a lined tray until you're ready to fry them, or freeze and fry later.
  4. Carefully place the cheese cubes in the oil, one at a time, and cook until golden. Some cheese may come out, but there is still a lot of cheese inside the bucket. Place the fried cubes on a plate lined with kitchen paper to drain. Sprinkle with chopped parsley and enjoy immediately.

Notes

BAKING INSTRUCTIONS: Place cheese cubes on a baking sheet lined with aluminum foil and generously drizzle with nonstick spray. Bake at 425 degrees for 10 to 12 minutes, or until golden brown on the outside.
