Creamy spinach orecchiette

I realize that spinach is a controversial vegetable. Do you love it or hate it. Sometimes you hate a type of spinach (like spinach) and tolerate young spinach in a salad.

Our home is torn in the spinach department. Although I will tolerate and occasionally eat spinach with cream, I love it when I'm young, whether raw or cooked. In spring, I consume a lot. Mitja, on the other hand, will only eat young, raw leaves in a salad, when it hides among other vegetables.

So when I make lunch for myself, I can enjoy the young spinach leaves the way I want them. In this case, combined with a fun pasta, with a pinch of cream and.

This is a beautiful spring recipe that is done in no time. It is ideal for a weekend lunch when you want to spend as little time as possible cooking. I prefer to spend my time doing things other than cooking or the dishes (but I still like to eat well and well) 🙂

  • 200 g of pasta orecchiette
  • 1 red onion
  • 3 garlic cloves
  • 2 cups young spinach leaves
  • 100 ml of cooking cream
  • salt pepper
  • 1 tablespoon of olive oil
  • 1 tablespoon minced green onion
  • 1 teaspoon minced chives
  • grated Parmesan cheese

  1. Pour water into a saucepan and add a pinch of salt. Bring the water to a boil, then add your pasta. Cook according to package directions until al dente (well cooked, but still firm in the middle when chewed). When cooked, reserve a cup of pasta water and then drain the pasta.
  2. Peel the onion and garlic cloves and the chop. Wash your spinach and drain.
  3. In a frying pan, heat the olive oil, then add the chopped onions and garlic. Stir occasionally until tender and translucent. Add the cooking cream and stir in the onions, then add the drained pasta and the spinach leaves and combine well. If the pasta is too thick, add a drizzle of pasta water to reduce the thickness. Salt and pepper to taste. Serve your pasta with grated Parmesan cheese and a pinch of chopped fresh chives.
