You may not think of cucumbers as a snack, but I grew up eating them. During the spring and summer months, my grandmother always had a bowl full of sliced cucumbers floating in ice water with plenty of fresh dill sitting on the kitchen table. My grandmother didn't believe in eating between meals, so having this cucumber snack plate was a big problem.
My second favorite way to chop cucumbers is this southern creamy cucumber recipe. It is an easy and delicious way to use all those summer cucumbers.

Southern creamy cucumbers can be made in just 5 minutes. I like to chill them for about 30 minutes before serving them, but you shouldn't prepare them too far in advance or they will become liquid as the liquid begins to escape from the cucumbers into the sauce.
To make it even healthier, you can use Greek yogurt instead of sour cream.

Southern creamy cucumbers have a fresh, creamy, sweet and spicy sauce with lots of fresh dill and Vidalia onion. Great summer accompaniment.
- 2-3 medium cucumbers, thinly sliced
- 1 medium sweet onion, cut in half and thinly sliced
- 1 cup low-fat sour cream or Greek yogurt
- 3-4 tablespoons of apple cider vinegar
- 2 tablespoons granulated calorie-free SPLENDA® sweetener
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon celery seed
- 2 tablespoons minced fresh dill
Place the cucumbers and sweet onion in a medium bowl.
In a small bowl, combine sour cream, apple cider vinegar, SPLENDA® calorie-free sweetener, granules, salt, pepper, and celery seeds.
Pour over cucumbers and stir to coat.
Sprinkle dill on top. Serve immediately or chill for 30-60 minutes.
Start with 3 tablespoons of vinegar and add an extra tablespoon for more flavor. It can be substituted with red wine vinegar or rice vinegar.
