Creamy Pumpkin Spaghetti with Spicy Turkey and Garlic Kale {Gluten and Dairy Free Option}

Of all the festive dishes I've eaten in the past few months, this dish stands out as one of the most delicious things I've eaten during the decline of the holidays. Tonight wonder is my new favorite pasta dish. I have a feeling I'll be doing it in secret long after the pumpkin season.

If you have seen jars of pumpkin pasta sauce like they have a Trader Joe’s and Target and wondered how pumpkin, tomato and pasta would really mix, trust me! I was skeptical, but the flavors of this dish are irresistibly tasty and delicious. Add spicy turkey and garlic kale for a healthy and satisfying weekday dinner. The leftovers from this meal are also worth it. Sometimes gluten-free leftover pasta is meh, but this dish is still so delicious the next day!

This recipe is meant to suit your allergy needs. Depending on the amount of dairy I have recently eaten, I generally use cashew cream and then sprinkle it with real Manchego cheese. If you can eat dairy, use half and half instead of plain cashew cream. If you can't have any dairy, don't be afraid, one of the reasons I love this dish so much is because you don't need any dairy to make it satisfying and creamy. You can sprinkle it with "vegan" Parmesan (in this case I use this recipe). Enjoy!

Creamy Pumpkin Spaghetti with Spicy Turkey and Kale {Gluten-Free, Dairy-Free}

The leftovers from this dish are delicious! Use any gluten-free spaghetti you like. If you can eat dairy, use half and half instead of plain cashew cream.

Ingredients

For the sauce

  • 1/2 cup sun-dried tomatoes packed in oil
  • 1/2 chopped onion
  • 2 garlic cloves, minced
  • 1/2 cup of pumpkin puree
  • 1/2 cup canned tomato sauce or tomato puree
  • 2-3 cups chicken stock
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried sage
  • 1/2 teaspoon salt
  • pinch of red pepper flakes
  • small pinch of cinnamon
  • 1/4 cup raw and unsalted cashews (to make a simple or sub cashew cream 1/2 cup half and half)

For the pasta:

  • 12 ounces gluten-free spaghetti
  • 2 tablespoons of olive oil
  • 1 pound ground turkey, I use 93/7
  • 1/2 onion, thinly sliced
  • 1 tablespoon of chili powder
  • 1 teaspoonful of garlic powder
  • 1/2 teaspoon salt
  • Manchego or Parmesan cheese for filling, optional

For the garlic kale

  • 2 tablespoons of olive oil
  • 1 bunch kale, stemless, chopped leaves
  • 2 garlic cloves, minced

Instructions

  • Heat a pot over medium heat. Add the sun-dried tomatoes and a few tablespoons of oil in which they are packed. Add onion and cook until softened, about 5-7 minutes. Add garlic and cook for another 30 seconds. Add the pumpkin, tomato sauce, 2 cups chicken stock, basil, sage, salt, red pepper flakes, and cinnamon. Bring to a simmer. Cook for 15 minutes, adding more stock if sauce becomes too thick.

  • Meanwhile, place cashews in a high speed blender. Add 1/2 cup of broth and mix until smooth. (Skip this step if you use half and half.) Add sauce to blender (do this in batches if your blender is more than 2/3 full) and blend until smooth. Add more broth to lose weight if necessary. Season with salt and pepper to taste.

  • In a large skillet over medium-high heat, heat the olive oil. Add the ground turkey and press into an even layer, turning the pan if necessary to get olive oil underneath the entire turkey. Cook without stirring for 5 minutes. Sprinkle the chili powder, garlic powder, and salt over the turkey. Break the turkey into small pieces and add the spices. Continue cooking until well cooked.

  • Meanwhile, boil pasta according to package directions. Add pasta and sauce to turkey and stir to combine. Add a little grated Manchego or Parmesan cheese.

  • For the kale, heat the olive oil over medium-high heat. Add kale and garlic and sauté until wilted, about 5 minutes. Spice with salt and pepper.

  • Serve the kale along with the pasta. Sprinkle everything with more cheese before serving. Enjoy!
