What's in Keto Chicken Marsala?

  • Chicken breasts
  • Baby Bella mushrooms (or button)
  • Chicken soup
  • Mascarpone cheese
  • Marsala wine
  • Garlic clove
  • Dried basil
  • Fresh parley
  • Olive oil
  • Grass-fed butter
  • Salt and pepper to taste

How to make Kesa Chicken Marsala

Heat the olive oil in a saucepan over medium-high heat. Sauté chicken and season with basil, salt, and pepper, about 3 minutes on each side. Remove the chicken and set it aside.

Add the butter to the pot, then sauté the mushrooms.

Let them get a good color, then push to one side. Add garlic and sauté for 20 seconds, be careful not to burn it!

Deglaze the pot with the marsala wine, scraping the brown pieces at the bottom.

Add the chicken stock and most of the parsley (reserving a little for garnish), then add the chicken again. Cook for 10 minutes over medium heat, uncovered.

Remove chicken and cook another 5 minutes to allow sauce to thicken. Add mascarpone cheese and cook 5 additional minutes or until thick.

Add chicken again to heat.

Top with a side of parsley and serve along with your favorite Keto salad or vegetable!

Tips for the best Keto Chicken Marsala

  • Uniform use of chicken breasts or chicken chops will ensure even cooking.
  • If you don't have Mascarpone cheese, you can use cream cheese, but it will get a slightly spicier flavor and the carbohydrate count will change, so be sure to adjust your macros accordingly.
  • Marsala wine is an Italian wine that comes dry and sweet. A dry wine is when salty dishes are cooked.
  • Do not throw away the excess wine. If kept in a cool place, it will continue to be good for weeks.
  • If you prefer another wine, Madeira and port will work as a substitute. Both will give you a different flavor profile, but it will still be delicious.
  • For best results, cut the mushrooms fairly thick. As they cook, they will decrease in size. You want them to be a good size on the finished plate.
  • Although these recipes call for homemade chicken broth, if you're in a hurry, you can always use a high-quality chicken bone broth like this one from Kettle and Fire.
