Ingredients

  • 4 slices of minced bacon
  • 3 tablespoons of butter
  • 1 tablespoon of olive oil
  • 4 garlic cloves, minced
  • 1 pound small mushrooms, rinsed and dried with paper towels
  • 1/2 teaspoon chili powder, or to taste
  • 1/2 teaspoon of sweet paprika, or to taste
  • 1/2 teaspoon garlic powder
  • salt and freshly ground pepper, to taste
  • 1/4 cup low-sodium chicken broth
  • 1/2 cup thick cream
  • chopped fresh parsley, to garnish

Instructions

  1. Heat a skillet over medium-high heat and add the chopped bacon; cook until crisp and remove from pan. Set aside.
  2. Add butter and olive oil to the pan; once melted, lower the heat to medium and add the garlic. Continue cooking for 2 minutes, stirring frequently. Don't burn the garlic.
  3. Add mushrooms to skillet and top with butter sauce.
  4. Season with chili powder, paprika, garlic powder, salt, and pepper.
  5. Continue cooking over medium-high heat for 5 to 7 minutes, or until tender and golden brown.
  6. Add the chicken stock and cook for 10 seconds.
  7. Add thick cream and continue cooking for 3 to 4 minutes, or until sauce begins to thicken.
  8. Remove it from the heat; Add bacon and garnish with parsley.
  9. To serve.
