How to make a Roux for cheese sauce

The most important part of any good sauce is a "roux" which is essentially a thick, cooked combination of butter and flour.

This will be the base of the sauce and it only takes a few minutes to prepare! Be sure to stir it constantly and cook the flour to remove any starchy flavor before adding the other ingredients.

How to make a cheese sauce

This is where it gets good! Really good! To make a cheese sauce:

  1. Cook flour and seasonings with butter to remove any flour flavor.
  2. Slowly add a little milk to the roux and beat constantly (it will be super thick). Keep adding little by little until it softens.
  3. Whisk until it boils and let it bubble for 1 minute.
  4. Remove from the heat and add the cheese. Beat until smooth.

Remember to always remove from heat before adding cheese, milk will still be hot enough to melt. Cheese can separate or become grainy if overheated.

Make sure to adjust it to taste, feel free to add a dash of hot sauce or garlic powder… whatever you want!

How to thicken cheese sauce

The ratio below will create a perfectly thick, cheesy sauce and should not require thickening.

The best way to thicken a cheese sauce would be to add more cheese! Who can resist a thick, creamy and tasty cheese sauce, perfect to also make macaroni and homemade cheeses?

Another way to thicken a cheese sauce is to add a little cornstarch slurry (equal parts cornstarch and water) added to the hot cheese sauce a little. This method is less desirable, you risk the cheese separating if you overheat it by thickening.

More cheese please
