Cinco de Mayo is approaching and I have to admit I'm a little excited! I think it excites me more than Christmas if it were completely honest! As you know, Southwestern-inspired and Mexican dishes are my favorites, so you know we'll have more than enough food for our party! I'm still working on the details, but I'm really thinking about adding this corn sauce to the menu. It is so versatile, easy and delicious!

This recipe calls for 2 jalapeƱos. I observe in the recipe to maintain the seeds depending on the level of spiciness that your family prefers. For the jalapeƱos, I discarded one, throwing those seeds away, and keeping the seeds in the other pepper, which seems to be the perfect level of spiciness for my family. I also cheat and toss the red onion, jalapeƱo, and coriander in the food processor for a few pulses, so I really don't have to cut much!

We enjoyed this corn sauce with tortilla chipsā€¦ and my favorite – in homemade burritos bowls !! Heck, we've even eaten this as a separate garnish, like a cold salad before because it's so good.

  • 1 bag (12 oz.) Frozen corn, thawed and drained
  • 2 jalapeƱos, finely chopped (keep the seeds according to the level of spiciness you prefer)
  • 1/2 cup finely chopped red onion
  • Handful of chopped fresh coriander
  • Juice of 2 limes
  • 1 teaspoon salt
  • 1/4 teaspoon pepper


  1. In a large bowl, combine all the ingredients. Refrigerate for at least 2 hours to mix flavors before serving.
