With fresh corn cut directly from the cob, cherry tomatoes, spices and a light dressing, this Corn and Tomato Salad It is perfect for a summer lunch or dinner!
** Update July 2017! ** This recipe was originally published in July 2014. I decided that the photos needed a desperate update, so I re-filmed the recipe (but still kept the ingredients list and instructions the same). I also kept the original post / story below that I wrote three summers ago!** **
Summer just screams out the salad season, right? Don't get me wrong, salads are wonderful any time of year, but they seem to taste better in summer. Fresh produce, bright pops of color, and light toppings are the perfect lunch (or dinner) for me. And now that I've become a regular at my town's farmers market, I'll use whatever excuse I can find to stock up on some delicious fruits and vegetables.
As I strolled through the aisles of the farmers market last Friday, carefully inspecting my produce, a family across the road caught my eye. A mother, who seemed a little exhausted, was trying to pass her two daughters around a table of fresh berries that was in one of the hallways.
With her back to him, the oldest daughter, probably about five years old, silently approached and grabbed two raspberries from an open container. He stuffed one into his mouth, carefully savoring the sweet taste and savoring his secret victory. Her younger sister heard about this and immediately yelled, “I want one! I want one! "When the girls ran around the table, with the mother behind me, I couldn't help but laugh.

Although I didn't grow up with a younger sister, my brother and I had a fair amount of laughter and fighting. As I walked away with my products, I heard the mother say, "All I need is a little corn for a salad, and then we're done."
After stocking up on several ears of fresh corn, I knew I wanted to make a salad, just like the mother with her young children. Fresh vegetables were a must, and the flavor had to be light. Therefore, I created this corn and tomato salad. With fresh corn cut straight from the cob, cherry tomatoes, herbs, and a light dressing, this salad is perfect for a summer lunch.
Other than fresh vegetables, the dressing is my favorite part! I used a mixture of white balsamic vinegar and olive oil. That's! It gives this corn and tomato salad a light flavor that pairs perfectly with fresh herbs.
And like all my recipes, this salad is very easy to prepare. The only preparation work necessary is to boil the corn, cut it, cut the vegetables and mix. And voila! A perfectly light and healthy salad, perfect for a hot summer day or a warm summer afternoon.
Fresh vegetables and herbs definitely make this out of this world salad good. If you love basil and oregano then you will just adore this salad! And if you haven't tried white balsamic vinegar yet, you need to do it right away. It will be a change of life, trust me!
So the next time you are looking for a new salad loaded with fresh produce, try this corn and tomato salad. I promise you will love it as much as I do!
