Cherry Almond Cola Bread, loaded with maraschino cherries and topped with almonds and a cherry cola frosting, is an easy and delicious dessert bread.
This bread came about because I had 3 jars of maraschino cherry in my pantry and 2 in my fridge. Now, except for the food style, the occasional cocktail, I really don't have much use for maraschino cherries. How I ended up with so many jars, I don't know.
What I do know is that the Cherry Almond Cola Bread is a quick and easy bread to prepare with the recognizable extra sweet maraschino cherry flavor. It is perfect served with a cup of coffee or as a dessert.
The cake itself doesn't have much sweetness except for the sweet bursts of cherry chunks. However, the Cherry Cola Glaze is extra sweet. Sprinkle as much or as little as you like on the bread to control the sweetness.
A little bit of almond extract in the dough and sliced almonds on top give the bread a wonderful flavor.

Every time I eat dessert bread, I like to eat it with my fingers, taking one small bite at a time. Usually I do something like read while I eat it.
Which reminds me to tell you that I just read such a wonderful book. I am ashamed to say that it is the first novel I have read in many years. I love to read, but it is very difficult to find the time and I hate to say that spending time on the Internet has replaced my reading time.
But this summer I am determined to change that.

Because I postponed our trip planning until the last minute, I had no choice but to do my book selection at Target while doing some last-minute shopping on the beach.
By the way, when did the selection of beach towels become so poor and expensive? If someone is looking to start a business, I tell them to make attractive and good quality beach towels at a reasonable price and that I am their first customer. I had to resist the urge to playfully buy my 17-year-old son a Batman towel. It would have if it hadn't been as thin as the lace and felt like sandpaper.
Impressed with the book selection at Target, I chose 5 books, ignoring my daughter's objections. I am picky about the books I like and want, I needed to read one that I really connected with. I started one and I didn't really get into it, so I started a second and it was one of those books that you stay up all night reading, but then when you get close to the end, you read as slow as possible because I can't stand it ending .
Better yet, she was a food blogger and her best friend travel writer.

Cola bread with cherry and almonds
Preparation time: 15 minutes.
Cook time: 1 hour and 15 minutes

A delicious quick bread flavored with coca cola, almonds and maraschino cherries. Topped with a sweet cherry frosting for extra sweetness.
- 1 cup butter, softened
- 1 cup of sugar
- 5 eggs
- 2 3/4 cups all-purpose flour
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1 1/4 cups cola drink
- 1 (12-ounce) jar maraschino cherry, reserve juice, drained and chopped
- 2 tablespoons all-purpose flour
- 1/4 teaspoon of almond extract
- 1/3 cup sliced almonds
- 2 tablespoons reserved cherry juice
- 1 tablespoon cola drink
- 1/2 cup icing sugar
Preheat oven to 300 degrees and drizzle 9X5-inch pan with flour spray oil.
In a bowl, beat the butter and sugar on medium-high speed with an electric mixer until smooth and fluffy.
Add the eggs one at a time, stopping to scrape down the sides of the bowl several times.
In a medium bowl, combine flour, baking powder, baking soda, and salt.
With the mixer on medium-low speed, add 1/3 of the flour mixture to the bowl.
Once the flour is mixed, add 1/2 of the cola, followed by another 1/3 of the flour mixture.
Add the remaining cola and then the remaining flour. Once the dough has a uniform consistency, turn off the mixer and add the almond extract.
Mix the cherries with 2 tablespoons of flour and stir in the dough.
Pour batter into prepared pan . Top with almonds and bake for about 1 hour and 15 minutes, or until a wooden toothpick inserted into the bread comes out clean.
Let cool in skillet 10 minutes and remove from skillet to cool completely.
Beat the cherry juice, 1 tablespoon of cola and the powdered sugar. Spoon on bread.
