In this recipe I want to share a trick that is being used more and more to make your morning coffee even more nutritious. It is about adding a little spirulina powder, a blue-green algae noted for its properties and health benefits. With just a teaspoon you can get an extra contribution of vegetable protein, vitamins, minerals and essential amino acids. - 2 teaspoons of coffee (caffeinated or decaffeinated)
- 2 teaspoons spirulina powder
- 2 cups soy milk (or other type)

In a saucepan put heat soy milk (I used cocoa soy milk for a hint of chocolate flavor), coffee and spirulina.
Trick: Since vegetable milks are often sugared, I have not added any extra sweeteners.
Bring the milk to a boil and simmer a little. Turn off the heat and let the coffee sit for several minutes. Next, pass the coffee through a strainer and serve in cups.
To assemble the foam use the mini electric mixer to foam the coffee with spirulina.
