- 1/2 cup margarine
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 2 tablespoons of extra light olive oil
- 3 medium ripe banana
- 1/2 teaspoon ground cinnamon
- 1/3 teaspoon mixed spices
- 1 tablespoon of baking soda
- 2 teaspoons of baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 teaspoon of lemon juice
- 2 cups plain flour
Preheat the oven to 180 ° C and line a 23 cm can of bread with baking paper.
Place the margarine and sugars in a large bowl.
Beat with an electric mixer on medium speed for 3-4 minutes, or until fluffy.
Add vanilla oil and essence and gently fold into the mixture.
Crush the bananas and gently fold into the mixture.
Sift cinnamon, mixed spices, baking soda, baking powder, and salt into the mix.
Combine milk and lemon juice.
Sift 1 cup flour and ¼ cup milk into the mixture.
Gently fold and repeat with the remaining flour and milk.
Bake for 45-55 minutes, or until a skewer inserted in the middle comes out clean.
Canola or vegetable oil can be used instead of olive oil.
If the mixture seems dry, add a little milk to get the desired consistency.
Any fruit can be used in place of banana.
Whole wheat flour works just as well if you prefer.
It has a beautiful roasted flavor with a nice spread of margarine and a drizzle of honey.
