Coconut meringue cookies: keto, low carb and sugar free

Finely grated coconut flavor these meringue cookies. They are so light and airy, and they taste like little coconut clouds!

It's such an easy low carb dessert and you won't believe how good they are!

I give them a coconut flavor with pure coconut extract and grated coconut, but you can add almost any flavor to these as you like!

How to make coconut keto meringues

Ingredients

3 egg whites, room temperature

1/2 cup of goodies

1/3 cup unsweetened coconut, finely grated

1/4 teaspoon of pure coconut extract

1 teaspoon of purevanilla extract

1/4 teaspoon cream of tartar

Pinch of salt

Preparation

Preheat oven to 275F.

In the clean, dry bowl of a stand mixer, add the egg whites and beat until smooth.

Add cream of tartar and mix turn slowly, and continue beating until stiff peaks. Add the salt, vanilla and coconut extracts. Mix until well combined.

If you don't have a stand mixer, you can use a clean, dry large bowl and a hand mixer.

Fold the finely grated coconut.

Scoop out the dough with a cookie scoop (or two scoops) on a baking sheet lined with a Silpat or parchment paper.

Bake for 30 minutes or until golden. Leave in the oven for 1 hour, with the oven off and they will be slightly chewy inside. Leave in the oven for 2 hours and they will be crispy until the end.

Store at room temperature in an airtight container for 2-5 days.
