This Coca-Cola cake is a southern favorite! It is perfect for celebrations or shared meals!

If you live in the south, I am almost sure that you have not only heard of Coca-Cola Cake, but I am sure that you have delivered once or twice. If you're from somewhere else, Coca-Cola Cake may be new to you! It is quite popular in shared meals and every southerner has a ______ (aunt, mother, grandmother, neighbor, pastor's wife … you know!) Who makes this wonderfully delicious cake!

Since this Coca-Cola cake starts with a boxed cake mix, it is very easy to put together. Unlike many cakes, this cake has a subtle chocolate flavor combined with Coca-Cola … and the icing? I'm sure you've already discovered that homemade frosting is always one of my favorites! Is the perfection. I think sometimes I love frosting more than cake! I definitely plan on making this cake soon! You will be glad you did! Oh, and don't forget to pour a spoonful of the frosting while no one is watching … you know, for quality control purposes! Hehe!

Coca-Cola Cake

This Coca-Cola cake is a southern favorite! It is perfect for celebrations or shared meals!

Ingredients

For the cake

  • Miracle Pan Release or kitchen spray (for the pan)
  • 1 package (16.25-18.25 oz.) Simple White Cake Mix
  • 4 tablespoons unsweetened cocoa powder
  • 1/2 cup (1 stick) butter, melted
  • 1 cup of Coca-Cola
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mini marshmallows

For the frosting

  • 1/2 cup (1 stick) butter, softened
  • 4 tablespoons unsweetened cocoa powder
  • 1/3 cup of Coca-Cola
  • 4 cups powdered sugar (sifted)

Instructions

  1. Preheat oven to 350 ° F. Brush 9 × 13-inch baking pan with Miracle Pan Release or lightly spray with cooking spray. Set the pan aside.
  2. Place all cake ingredients except marshmallows in large bowl. Combine with an electric mixer at LOW speed until primarily combined. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase mixer speed to MEDIUM and continue beating for an additional 2 minutes or until well combined. Add the marshmallows. Pour the dough into the prepared skillet, smoothing it with a rubber spatula.
  3. Bake for 40-42 minutes or until the cake begins to separate from the edges of the pan and the cake jumps back when touched lightly with your fingertip. Remove the cake from the oven to the rack to cool while preparing the frosting.
  4. Meanwhile, place butter in medium saucepan over low heat. After the butter melts, add the cocoa powder and Coca-Cola. Bring the mixture to a boil, stirring constantly. Remove from heat and quickly add powdered sugar. Stir until frosting is smooth.
  5. Pour the frosting over the prepared cake, spreading it evenly over the top. Let the cake cool 20-30 minutes before serving.
