- 175 g unsalted butter
- 300 g of powdered sugar
- 1 egg
- 1 egg yolk
- 1 Teaspoon vanilla extract
- 1 pinch of salt
- 300 g plain flour
- 1 grated lemon zest
- 1/2 cup plain flour * extra for sprinkling
Preheat the oven to 190C.
Beat the butter with an electric mixer. Gradually add the sugar and continue beating until smooth and fluffy.
Using a wooden spoon, mix the whole egg and the egg yolk. Add vanilla essence, lemon and salt. Stir to mix well.
Sift the flour into the mixture, stir to mix. Gather the dough into a ball, cover with plastic wrap, and chill in the fridge for 30 minutes.
Lightly flour a clean surface with the extra flour and roll out the dough to 1 cm thick. Any thinner and they will crumble when you lift them up. Also be sure to use enough flour on its surface or else the dough will stick and crumble.
Cut out shapes and place them on baking sheets.
Bake for about 8-10 minutes, or until golden brown. Let cool for 5 minutes before transferring to a cooling rack.
Decorate if desired.
