Chorizo Breakfast Bowls
These breakfast bowls with chorizo are a great way to start your day, but they're also hearty for dinner! My healthy turkey chorizo recipe inspired me to make these Mexican bowls for breakfast. These tasty breakfast dishes are high in protein. They start with a layer of roasted potatoes, followed by turkey chorizo. Chorizo is generally made from pork and is high in fat. However, my chorizo recipe uses lean ground turkey to keep it light. After the chorizo, add the fried egg, Mexican cheese, and avocado. I like to use white cheese or queso fresco, both Mexican white cheeses, in these bowls. If you like a little spice, add a little of your favorite hot sauce on top.

Chorizo Breakfast Bowls

For the potatoes:
12 1 pound golden or red potatoes, quartered
3 teaspoons of olive oil
3/4 teaspoon of salt
1/2 teaspoon garlic powder
fresh black pepper to taste
For the bowls:
- olive oil spray
1-1 / 3 cups cooked turkey chorizo, heated
8 large eggs
- kosher salt
2 tablespoons crumbled Mexican cheese, white cheese, fresh cheese
4 ounces avocado, sliced, 1 ha small
coriander or chives, to decorate
Cholula hot sauce, to serve
Preheat oven to 425F. Drizzle in a large 9×12 oval saucepan or with oil.
Add potatoes, 1 tablespoon oil, 3/4 teaspoon salt, garlic powder, and black pepper and stir.
Bake until tender, stirring every 15 minutes, about 45 to 55 minutes.
Meanwhile, heat large nonstick skillet over medium-low heat, drizzle with oil and batch cook eggs sunny side up, until whites are ready, 2-3 minutes to get a liquid yolk, or more if it is a firm yolk. is desired.
To serve, divide potatoes into 4 bowls, top each with 1/3 cup chorizo, 2 fried eggs, crumbled cheese, 1 ounce avocado, and garnish with chives or cilantro.
