I bought a bottle of coconut oil at Trader Joe’s and was not sure what to do with it. I really wanted to eat a chocolate chip cookie, so I decided to substitute butter for coconut oil in one of my recipes. Oh my! The cookies were SO delicious! It was crispy on the outside and soft on the inside. Just how I like them! I especially liked the slight hint of coconut flavor in the cookies.
My favorite part of making these cookies was that I didn't have to wait for the butter to soften. I just opened the jar of coconut oil and started baking. It was great to stimulate cookie cravings!

Chocolate chip cookies with coconut oil
preparation time: 5 MIN Cooking time: 10 MIN Total time: 15 minutes
Ingredients:

3/4 cup coconut oil
-
1 cup brown sugar
-
1/2 cup of sugar
-
2 eggs
-
1 teaspoon of vanilla extract

2-1 / 4 cup flour
-
1 teaspoon of baking powder
-
1 teaspoon salt
-
2 cups of chocolate chips
Instructions:

Preheat oven to 350ºF. Cover a baking sheet with parchment paper.

Beat the coconut oil and sugars until smooth and fluffy. Add the eggs one at a time, beating well after each addition. Mix in vanilla.

Combine flour, baking powder, and salt in a small bowl. Slowly add the flour mixture to the mixer. Add the chocolate chips.
- Scoop the dough into 2 tablespoons rounds. Place on a prepared baking sheet. Bake for 10-12 minutes, until bottoms are golden.
