Chocolate Chip Cookie with Almond Butter and Flourless Oatmeal {Gluten Free}

These cookies are almost as easy as cookies! It only takes a few minutes to come together and I always have the ingredients on hand. They are crispy on the outside and chewy in the center.

Oatmeal gives them a delicious texture and flavor. You can also make them with peanut butter. I have brought these cookies to parties and meals and nobody guesses they are gluten and dairy free!

These cookies are great for those nights when you want an easy gift. I love being able to get these started to finish in about 45 minutes to curb any cravings for cookies. Perfect for the nights you want to party and party on Netflix!

Be sure to stir the almond or peanut butter well before measuring for this recipe. These are much better when you don't use the dried almond butter from the bottom of the jar. Save that for toast and do it with almond butter which is still nice and creamy.

Flour Free Chocolate Chip Cookie with Almond Butter and Oatmeal {Gluten Free, Dairy Free}

  • 2/3 cup rolled gluten-free oatmeal
  • 1 teaspoon of baking soda
  • 3/4 teaspoon salt, reduce to 1/2 teaspoon if the almond butter contains added salt
  • 1 teaspoon of cinnamon
  • 1 cup almond butter
  • 2/3 cup dark brown sugar
  • 2 large eggs
  • 2 teaspoons of vanilla extract
  • 2/3 cup chocolate chips


  • Preheat oven to 350F. Line 2 baking sheets with parchment paper.

  • In a medium bowl, combine the oatmeal, baking soda, salt, and cinnamon. Stir to combine.

  • In the bowl of a stand mixer, beat the almond butter, brown sugar, eggs, and vanilla until smooth, about 2 minutes.

  • With the mixer on low heat, slowly add the oat mixture. Mix until combined. Add the chocolate chips. The dough will be very sticky!

  • Place 2 tablespoons of the dough on the prepared cookie sheets. Bake each batch for 9-11 minutes. Chill 2 minutes before removing from the baking sheet. Transfer to a wire rack to cool completely. Enjoy!

Recipe Notes

I use Enjoy Life brand dairy-free chocolate chips. Costco also sells a large bag of dairy-free chocolate chips.
