I recently created a hearty whole grain chicken salad topped with sweet red onions, spicy arugula, and a creamy chipotle mayonnaise. To save time, I love to use the leftover roast chicken, but any leftover meat like pork loin or roast beef would also work very well.

When I select bread for my sandwiches, I love using whole wheat bread because it provides ideal combination of fiber and long-lasting carbohydrate energy.   • 8 slices of whole wheat bread
  • 8 ounces cooked chicken breast (thinly sliced ​​/ shaved)

  • 1/4 cup red onion (thinly sliced)

  • 1/2 cup mayonnaise
  • 1 chipotle pepper in marinade (chopped)
