It can be easy to get caught up in a lunch routine eating the same soft turkey sandwich day after day. To avoid boredom and keep lunchtime interesting, I realized that the key to a perfect sandwich is flavor, nutrition, and a variety of textures.
I recently created a hearty whole grain chicken salad topped with sweet red onions, spicy arugula, and a creamy chipotle mayonnaise. To save time, I love to use the leftover roast chicken, but any leftover meat like pork loin or roast beef would also work very well.
When I select bread for my sandwiches, I love using whole wheat bread because it provides ideal combination of fiber and long-lasting carbohydrate energy. In addition to nutrition, I always consider flavors and textures when building a perfect sandwich. My creamy chipotle mayonnaise is made with two simple pantry ingredients and adds a luxurious creamy texture and slightly smoky flavor that pairs perfectly with crispy onions and crispy arugula.
To get even more texture, it's always a nice touch to toast the bread, but that's completely optional. Perfect for feeding before or after a workout, The carbohydrates in bread also contain high biological quality proteins and help build muscles. Now that's something I can back up!

Chipotle Mayo Shaved Chicken Sandwich
This hearty wholemeal sandwich is made with shaved chicken, baby arugula, and chipotle mayonnaise. The perfect recipe for lunch, dinner or a picnic to go!

- 8 slices of whole wheat bread
- 8 ounces cooked chicken breast (thinly sliced / shaved)
- 1 cup baby arugula
- 1/4 cup red onion (thinly sliced)
- 1/2 cup mayonnaise
- 1 chipotle pepper in marinade (chopped)
- In a small bowl, mix the mayonnaise and chopped chipotle peppers to create chipotle mayonnaise. Spread a tablespoon of chipotle mayonnaise on each slice of bread.
- Top four pieces of sliced bread with equal parts chicken, arugula, and onion before covering with remaining bread slices. Cut and serve.
