With just 2 minutes of effort, a simple pan of rice went from being boring to something special in this Chipotle Lime Rice.
I loved the unexpected flavor of the lime and the spicy heat of the chipotle pepper. This rice recipe is the perfect accompaniment to any Mexican, Tex-Mex or Southwestern meal.
Chipotle rice recipe
Rice is a classic staple on its own, but if you're looking for a way to literally spice up the common, chipotle-lime rice might be just the thing for you. With just a few extra steps, a simple bowl of rice transforms into a spicy, lightly spiced side dish for your meal.
After cooking the rice as you normally would, just drizzle it with a combination of olive oil and the sauce from a can of chipotle peppers. Top with cilantro or parsley if desired and serve this rice with a slice of fresh lime on one side.
The addition of finely chopped coriander or parsley adds wonderful color to brown rice along with a little fresh flavor. That being said, it is not strictly necessary and rice will still taste good without it.
Chipotle sauce adds a ton of smoky and flavor without making this rice too spicy or overwhelming. Even my family members who are not so interested in spicy food loved this rice!

Leftovers from this rice can easily be reheated for lunch or dinner on the second day. You can also toss the rice in a salad, wrap, or burrito with your favorite fixings. However you serve it, it will surely be a success.

Rice with coriander and lime
Coriander and lime are always a hit when combined in different recipes. The freshness of coriander and the tart flavor of lime pie are a magical combination.
There are a couple of other coriander and lime rice recipes that we make frequently and also love. This pineapple rice with coriander and lime is a children's favorite and we all enjoy this baked lime and coriander rice.

Chipotle Lime Rice
- Cook the rice according to the package directions.
- While the rice is cooking, combine the olive oil, lime juice, and chipotle sauce in a small jar and shake to combine.
- Once the rice is cooked, while it is still steaming, place it in a large bowl.
- Fluff with a fork and then drizzle with the lime sauce. Mix well to cover well and separate the rice.
- Try and season generously with salt and pepper.
- Garnish with coriander or parsley and serve with a lime wedge for extra flavor.

- 2 cups of freshly cooked Jasmine rice is my choice
- 2 tablespoons of olive oil
- 1 tablespoon of fresh lime juice
- 1 teaspoon canned chipotle pepper sauce
- kosher salt to taste
- black pepper to taste
- Optional: chopped fresh coriander or parsley for garnish and fresh lime wedge for serving
