If you follow me on social media, you've probably seen photos of my AeroGarden. Some of you may remember my first post about wanting to try your luck in a winter herb garden (there is still time to enter your own AeroGarden giveaway; see the first post or scroll down and enter below). I have wanted to do an indoor herb garden for a long time and the AreoGarden has been the perfect and easy solution for me! I can't believe how easy it has been and have enjoyed having fresh herbs at your fingertips!

Although Arizona temperatures can be quite mild in winter compared to most of the rest of the country, we still experience some fairly low nighttime temperatures. To be honest, I'm not very good at remembering to cover plants or bring them in when it's too cold outside. With AeroGarden, I really haven't had to do anything… it tells me when I need to add nutrients! I check the water level every few days and cut fresh herbs for dinner. There is nothing easier than this, friends. Seriously, even I can do it, and I Do not do have a green thumb!

Just a minor thought as the holiday season is upon us – if you have a gardener or home cook on your Christmas shopping list, consider getting an AeroGarden for Christmas! I love mine so much that I'm seriously considering buying another one so I can grow lettuce! Lately I've been enjoying salads for lunch and it would be so nice to have my own lettuce garden!

Our basil plant is growing like crazy: we have used it for homemade pizza sauce and spaghetti sauce. Our dill plant is fine too and I can't wait to make a dill loaf of bread! Children think dessert is very special when I add mint leaves tucked on top of our dessert. They are still checking how much all the plants have grown in the morning while preparing their breakfasts. It was fun watching them get so excited!

Since coriander is one of my favorite herbs, and it was one of the herbs I longed to use the most, I thought it would be fun to share a recipe that will help highlight that herb!

This chipotle chicken pasta is quick, easy, and delicious! It is the perfect midweek meal. If your family is not very tolerant of spices, you can cut the chipotle pepper in marinade to one pepper instead of two. Two is perfect for my family! Provides enough heat without being too overwhelming. 🙂 Fresh coriander really makes this dish's flavors stand out, not to mention looking pretty with that touch of green! Hope you enjoy!

Chipotle chicken pasta

This chipotle chicken pasta is quick, easy, and delicious! It is perfect for a quick midweek meal. Serve it with a salad and crusty bread for a dinner-flavored dish!


  • 1 tablespoon. vegetable oil
  • 1 1/2 pound boneless, skinless chicken breasts, cut into small pieces
  • 1/2 cup thinly sliced ​​onion
  • 2 garlic cloves, minced
  • 1 can (14.5 oz.) Diced small tomatoes, drained
  • 3/4 cup half and half
  • 2 chipotle peppers in marinade, seeded and chopped
  • 1/2 teaspoon salt
  • 2 tablespoons chopped cilantro
  • 1 pound of pasta (I used mezzi rigatoni)


  1. Heat a large nonstick skillet over medium-high heat. Add the oil and chicken. Cook for 5 minutes, turning the chicken over after about 3 minutes. Add the onion and garlic; cook an additional 3 minutes. Add the tomatoes, half and half, chipotle peppers, and salt. Stir to combine. Simmer, uncovered, for 4 minutes, stirring occasionally. Add coriander.
  2. Meanwhile, cook pasta according to package directions. Drain, reserving approximately ½ cup of water for cooking.
  3. Mix the pasta with the chicken sauce mixture. Add reserved water as needed to dilute the sauce. Serve immediately.
