How does Chipotle make its guacamole?

Thanks to several friends and former Chipotle associates, this is how they do it:

  1. Cut a couple of avocados in half, remove the pit and remove the meat.
  2. Mix the avocado with lemon and lime juice and add salt. Mixture.
  3. Then add finely chopped coriander, red onion, and jalapeƱo peppers. Add more salt if you like (I usually want more salt) and mix.

How to cut an avocado:

Please do not cut an avocado in half by holding it in your hand. There is a lot of caution when cutting avocados. They can be slippery, and the knife blade could slip out of the fruit and into your hand, if you're not careful and deliberate.

Choose your avocado and place it. To cut it longitudinally around the hole, cut it into the avocado with a chef's knife until the blade hits the hard seed, then carefully rotate the avocado with one hand while holding the knife steady in the other.

Rotate the avocado halves in your hands, gently twisting them if necessary, and separate the two halves and reveal the hole.

Help! Why does coriander taste like soap?

  • 2 large Hass avocados, halved and pitted
  • 1 teaspoon of fresh lemon juice

  • 2 tablespoons coriander leaves, finely chopped

  • In a medium bowl, combine avocados, lemon juice, and lime juice. Mash until smooth. Add onion, cilantro, and jalapeƱos. Season to taste with salt (I like 1/2 teaspoon). Serve with fries.
  • To refrigerate, place in a bowl and press a plastic wrap directly onto the entire surface of the guacamole so that no part is exposed to air.
