And why not? It is delicious, creamy, satisfying, hearty and gloriously "healthy fat." And when it comes to the guacamole restaurant, the Chipotle version is my number one choice.
Fortunately, nothing could be easier to do. And when you do it at home, there is no surcharge in sight.

Selection and storage of avocados:
I will be the first to admit that avocados can be tricky. For me, they can go from But I have learned some tricks.
Choose avocados that are firm, but don't feel like granite. They should give way when you gently squeeze them in the palm of your hand. Be gentle! If you use your fingertips, you risk damaging the delicate fruit.

Once the avocados are ripe enough for you, simply store them whole in the fridge until you're ready to put on the guacamole.
How does Chipotle make its guacamole?
Thanks to several friends and former Chipotle associates, this is how they do it:
- Cut a couple of avocados in half, remove the pit and remove the meat.
- Mix the avocado with lemon and lime juice and add salt. Mixture.
- Then add finely chopped coriander, red onion, and jalapeño peppers. Add more salt if you like (I usually want more salt) and mix.
- And, of course, devour it with tortilla chips!
How to cut an avocado:
Please do not cut an avocado in half by holding it in your hand. There is a lot of caution when cutting avocados. They can be slippery, and the knife blade could slip out of the fruit and into your hand, if you're not careful and deliberate.
Choose your avocado and place it. To cut it longitudinally around the hole, cut it into the avocado with a chef's knife until the blade hits the hard seed, then carefully rotate the avocado with one hand while holding the knife steady in the other.
Rotate the avocado halves in your hands, gently twisting them if necessary, and separate the two halves and reveal the hole.
Help! Why does coriander taste like soap?

Coriander contains a natural chemical compound that some people (about 4 to 14% of the population) have the ability to taste better than others. Those who can detect the compound describe coriander as soapy, metallic, or just plain awful. There is nothing you can do about it except avoid it in recipes. How long is guacamole in the fridge good for?

- 2 large Hass avocados, halved and pitted
- 1 teaspoon of fresh lemon juice
- 1 teaspoon of fresh lime juice
- 1/4 cup finely chopped red onion
- 1/2 jalapeño pepper, stemless, seeded and finely chopped (see notes)
- 2 tablespoons coriander leaves, finely chopped
- Tortilla chips to serve
- In a medium bowl, combine avocados, lemon juice, and lime juice. Mash until smooth. Add onion, cilantro, and jalapeños. Season to taste with salt (I like 1/2 teaspoon). Serve with fries.
- To refrigerate, place in a bowl and press a plastic wrap directly onto the entire surface of the guacamole so that no part is exposed to air.
For added warmth, include the jalapeño seeds (Chipotle does).
