That is precisely what I have done and, therefore, I share with you this delicious recipe made from chickpeas that is delicious as well as healthy, let no one say that eating vegetables is boring!   • 1 pot of cooked chickpeas (400 g)
  • 1 onion
  • 400 grams of tomato
  • 2 cloves of garlic
  • 1 teaspoon of smoked paprika
  • 1 glass of cognac
  • 400 milliliters of fish stock
  • 1 glass of white wine
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 jet of extra virgin olive oil

Steps to follow to make this recipe: 1

We drain the chickpeas and wash them well under the tap to remove the remains of the liquid that keeps them. We let drain. Although they are already cooked, on many occasions they are a little hard so for this recipe we put them in a saucepan, cover them with water, add a splash of wine and put them on the fire until the water evaporates.


We prepare the sauce, so that peel the onion and cut it into brunoisse (small squares). Peel the garlic and cut it into thin sheets to continue with the chickpea recipe with American sauce.


We sauté the garlic in a pan with hot olive oil. We stir frequently so that they do not burn and add the onion. We are poaching both ingredients.


Peel the tomatoes, cut them and add them to the pan together with the fish stock, the wine and the cognac. Stir well and let cook until the juices evaporate and the sauce takes consistency.


When you have reduced almost entirely, we add smoked paprika, pepper and grind with salt. We cook the tomato and onion sauce for a few more minutes.

Trick: If we want, we can give it a spicy point by adding chili or tabasco, even ground cayenne.


Add the chickpeas and a further splash of wine, mix well and cook until the liquid has evaporated.


We serve the chickpeas with american sauce accompanied by bread, and enjoy! You can also prepare a side salad, of lettuce and orange, for example, or some baked potatoes.
