  • 1 bottle of cooked chickpeas (400 grams)
  • 1 onion
  • 1 jet of extra virgin olive oil
  • 1 jet of white wine
  • 150 milliliters of water
  • 1 teaspoon Ras el Hanout

We started preparing our Moroccan-style chickpea recipe by opening the jar of legumes, draining the liquid and putting them on a large drainer. We wash them well with water to remove all the remains of the canning liquid and let drain.

Trick: If you have prepared cooked and you have leftover chickpeas you can use them perfectly in this recipe.


Meanwhile, we peel the onion and cut it into julienne strips. Then we put a splash of extra virgin olive oil in a pan and when it is hot add the onion. When it starts to be poached (transparent) add the chickpeas drained and sauté for a few minutes.


Add a splash of white wine, water (half a glass or a little more) and a teaspoon of Ras el Hanout. Stir well, cover and cook the chickpeas sauteed with onion until the broth has reduced.
