Summer is ending … It's a bummer. Children across the country are starting to go back to school. Pretty soon bloggyland will be in a pumpkin blast … trust me you can count on that.
Don't get me wrong, I love pumpkin and fall is fun – I'm not ready for summer to end yet. Living in Phoenix we experience a summer-like climate a little more than most, and that makes me happy! It is also one of the many reasons why I love living here! 🙂
I couldn't let summer go by without sharing one of my favorite summer salads. If you know me then you know that I love peaches are by far my favorite fruit! Although we mostly just enjoy eating them as-is, I love making some salads and cobblers during the peach season too!
This raspberry peach chicken salad combines some of my favorite things, and I feel good about feeding my family. It is healthy and light enough for a summer dinner. Enjoy!
Chicken Salad with Peach and Raspberry and Peach Vinaigrette
Homemade peach vinaigrette sends it over the top! You can keep the kitchen fresh with this quick and easy meal idea!

For the salad
- Mixed salad
- 2 large peaches, pitted and sliced
- 4 grilled chicken breasts, chopped
- 1 cup fresh raspberries
- 1/4 cup sliced almonds
- 1/4 cup shredded goat cheese
For the peach vinaigrette
- 1 large peach, pitted and cut into quarters
- 2 tablespoons sugar
- 2 tablespoons lemon juice
- 3 tablespoons balsamic vinegar
- Pinch of salt
- 1/3 cup vegetable oil
- Divide the salad ingredients among four dishes.
For the peach vinaigrette:
- In a blender, place all the peach vinaigrette ingredients except the vegetable oil. Cover and process until well mixed. With the blender running, gradually add the oil in a steady stream until it is emulsified and creamy.
- Serve with the Raspberry Peach Chicken Salad.
