Summer is ending … It's a bummer. Children across the country are starting to go back to school. Pretty soon bloggyland will be in a pumpkin blast … trust me you can count on that.

Don't get me wrong, I love pumpkin and fall is fun – I'm not ready for summer to end yet. Living in Phoenix we experience a summer-like climate a little more than most, and that makes me happy! It is also one of the many reasons why I love living here! 🙂

I couldn't let summer go by without sharing one of my favorite summer salads. If you know me then you know that I love peaches are by far my favorite fruit! Although we mostly just enjoy eating them as-is, I love making some salads and cobblers during the peach season too!

This raspberry peach chicken salad combines some of my favorite things, and I feel good about feeding my family. It is healthy and light enough for a summer dinner. Enjoy!

Chicken Salad with Peach and Raspberry and Peach Vinaigrette

Ingredients

For the salad

  • Mixed salad
  • 2 large peaches, pitted and sliced
  • 4 grilled chicken breasts, chopped
  • 1 cup fresh raspberries
  • 1/4 cup sliced ​​almonds
  • 1/4 cup shredded goat cheese

For the peach vinaigrette

  • 1 large peach, pitted and cut into quarters
  • 2 tablespoons sugar
  • 2 tablespoons lemon juice
  • 3 tablespoons balsamic vinegar
  • Pinch of salt
  • 1/3 cup vegetable oil

Instructions

  1. Divide the salad ingredients among four dishes.

For the peach vinaigrette:

  1. In a blender, place all the peach vinaigrette ingredients except the vegetable oil. Cover and process until well mixed. With the blender running, gradually add the oil in a steady stream until it is emulsified and creamy.
  2. Serve with the Raspberry Peach Chicken Salad.
