Chicken fajitas They are an easy and tasty midweek meal. A classic Mexican recipe, juicy chicken is seasoned, cooked, and cooked to perfection, then mixed with sauteed peppers and onions. A little fresh lime adds a touch of flavor, and the chicken fajitas are served with hot tortillas and toppings. You can't beat this healthy family favorite recipe.
Chicken fajita ingredients
Don't you love foods that only require a few basic ingredients? Well, this chicken fajita recipe is just that. All you need is chicken, bell pepper, onion, lime juice and spices, in addition to tortillas and your favorite ingredients. It is incredibly easy.
It's a one-skillet recipe and in less than 30 minutes, you'll have a tasty meal (I can't get enough of those Mexican spices) that also makes the best leftovers or meal preparation.
Homemade fajita seasoning is the best
While you can buy pre-made seasoning packages, I advise you not to. Nothing compares to the taste of homemade fajita seasoning and it's easy to make. In addition, it will avoid unnecessary fillers and additives. Here is a quick summary of the spices you will need:
- chilli powder
- Ground cumin
- Garlic powder
How to make chicken fajitas
Once you've made your fajita seasoning, the chicken fajitas come together quickly. Just follow these simple steps:
- Season the chicken. Generously sprinkle the fajita seasoning on both sides of the chicken and use your fingers to press it.
- Cook chicken Heat a large skillet over medium heat and lightly coat with a drizzle of olive or avocado oil. Brown the chicken breasts for about 7-8 minutes on each side. Then remove them from the pan and let them steep for a few minutes before cutting them into strips.
- Sauté the peppers and onion. While the chicken is cooking, cut the bell peppers and onions into thin slices. Then sauté in the same pan over medium heat for a few minutes until caramelized.

Do you need a cast iron skillet?
When it comes to cooking chicken, a cast iron skillet is ideal for abrasion. It gives it a good character and maximizes the flavors of the seasoning. Just be sure to season your cast iron properly to avoid sticking. But if you don't own a cast iron skillet, you can also use a stainless steel skillet.
Customize your chicken fajitas
While chicken fajitas taste great on their own, the ingredients can make a difference. From a serving of sour cream to slices of cheese or avocado, fajitas are a fun way to serve customizable options for your family or a big party! Some of my favorite ingredients are pico de gallo and guacamole.
And if you have some chicken fajitas left over, don't just wrap them in tortillas. You can use butter lettuce to make lettuce wraps for a lighter option. Or, you can toss them in a bowl with some green leafy vegetables, black beans, sweet corn, and avocado for an easy fajita salad.
Can you make prepared chicken fajitas?
Absolutely! This is a great recipe to prepare ahead of time as stir-fried chicken and vegetables will keep for up to 5 days in the fridge. Just store them in a sealed container and then reheat them before adding them to an omelette or salad.
