I love using my Dutch cast iron oven for soups or stewing meats in the oven. But this chicken enchilada soup can also be made in the slow cooker if you like.

If you have leftovers, it freezes perfectly, I like to use these 32 oz plastic containers to freeze my soups, perfect for 2-4 servings.

Masa Harina is a fine corn flour for homemade tortillas or tamales, it also helps thicken this soup and gives it a very authentic flavor. You usually come across flour at your local supermarket.
