How to make baked caprese chicken

For this caprese chicken bake, you only need five simple ingredients:

  1. pasta– I tried penne (I haven't tried whole wheat and haven't had great experiences with frozen / thawed whole wheat pasta)
  2. marinara– I'm going for a simple tomato basil and marinara basil
  3. boneless, skinless chicken thighs– I prefer them to chicken breasts, as they are less likely to dry out
  4. Cherry tomatoes– load it
  5. mozzarella cheese– Regular mozzarella pizza works very well for this. Save the fresh mozzarella for a caprese salad!

To serve– You are going to want to sprinkle with plenty of fresh basil and a little balsamic reduction to drizzle. I have not included them in our list of ingredients because they cannot enter the freezer.

Can I change the chicken? Sure, you can just drop it and make this caprese chicken vegetarian. Or you could trade in ground beef, however, it would cook and drain before baking everything.

Can I add more vegetables to this baked caprese chicken? The best way to do this would be to cook them in the marinara sauce. Try sautéing some onions, garlic, grated carrots, even some spinach would cook well in the sauce.

Can I change the paste of this baked caprese chicken? Do it at your own risk! I have chosen penne because it is resistant and freeze / thaw resistant. Lasagna noodles would be another good option. I haven't tried whole wheat pasta and I don't know how it would work in this recipe.

Ingredients

  • 2 1/2 cups penne (uncooked; 7 3/4 oz; 225 g)
  • 1 pound boneless, skinless chicken thighs (cut into 1-inch pieces)
  • 1 1/2 cups marinara sauce (half a jar)
  • 2 cups cherry tomatoes (cut in half)
  • 1 1/2 cups mozzarella cheese (grated)

Instructions

  • Cook pasta according to package directions. Drain and set aside.

  • Heat oven to 400 ° F. Spray 9 x 9-inch baking pan with cooking spray.

  • Mix together the cooked penne, chicken, marinara sauce, and cherry tomatoes. Spread it evenly on the baking sheet. Sprinkle with cheese.

  • Cover and bake for 30 minutes.

  • Remove the lid and bake uncovered for 10 minutes.

  • Let stand for 5-10 minutes and serve with fresh basil and a drizzle of balsamic reduction.

To assemble ahead and freeze

  • Follow the steps above until step 3. Cover with aluminum foil and freeze for up to 3 months.

  • Bake from frozen– be sure to freeze in a metal baking dish (not glass). Place frozen pasta directly into oven at 350 ° F. Cook covered for 50 minutes and uncovered for 10 minutes.

  • Serve with fresh basil and balsamic reduction.

Notes

This recipe can easily be duplicated to freeze a batch.
