Chicken noodle casserole with broccoli can be made with a variety of different pastas. Why not try penne, rotelle, bowtie or cavatappi? Choose more abundant types of pasta that can hold up with chicken and broccoli.

  1. Cook pasta and add broccoli (per recipe below). Drain well and let rest.
  2. Combine all the ingredients. together. Mix well and spread in a saucepan.
  3. Sprinkle with topping and bake until cheese is bubbly and lightly browned.

Ingredients and variations

  • SAUCE It's meant to be a fast food and starts with a jar of alfredo sauce, but like my chicken spaghetti, I've also included a variation to create a sauce "from scratch." If you have a favorite chicken Alfredo sauce, use it.
  • CHICKEN Swap the chicken for leftovers from ham or turkey. Even ground chicken will work.
  • BROCCOLI While broccoli is the star of this dish, add sliced ā€‹ā€‹mushrooms, green peas, green beans, or diced carrots – or add them all together!
  • CHEDDAR CHEESE Broccoli and cheddar are a classic pairing, and Swiss adds a little flavor. Of course, cheese can be changed for whatever is in your refrigerator.

Chicken and broccoli stew

  • 8 oz medium pasta cooked al dente
  • 4 cups fresh broccoli cut into small pieces
  • 2 cups cooked chicken
Sauce * (optional from scratch sauce below)
  • 2 1/2 cups of alfredo sauce prepared around 2 jars
  • 1 cup cheddar cheese
  • 1/2 cup of Swiss cheese
  • 1 teaspoonful of garlic powder
  • 1 teaspoon dried mustard
Topping
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted
  • 1 tablespoon of parsley
  • 1/2 cup of cheddar cheese

  • Preheat oven to 350 degrees F.

  • Cook pasta al dente according to package directions by adding broccoli to cooking water for the last 2 minutes. Drain well.

  • Meanwhile, combine all of the sauce ingredients in a small bowl.

  • Mix the broccoli and pasta, sauce, and chicken. Place in a greased 2-quart saucepan.

  • Combine topping ingredients and sprinkle over saucepan.

  • Bake for 35 minutes or until bubbly and cheese is lightly browned.

  • Homemade sauce (optional) 1/4 cup butter 1/2 small diced onion 2 cloves garlic, minced 1/4 cup flour 2 1/2 cups milk 1/2 teaspoon dry mustard powder 2 oz cream cheese 3/4 cup cheddar and swiss cheese, grated Cooked onion, garlic and butter over medium-low heat until softened, about 5 minutes. Add the flour. Cook 1 minute more. Gradually add milk and cook until thick and bubbly. Add cheeses and dry mustard, stirring until melted. Season with salt and pepper to taste.
