Cheesy oven-grilled chicken with bacon and green onions


It took a little "training" and convincing to get my husband to try and like grilled chicken! But I wouldn't give up on him! Now it has become one of his favorite dishes and he asks for it quite a lot. Very very. So I like to come up with simple changes to add some variety so we don't get tired and bored of such a wonderful thing! And though I hover over grilled chicken, for this I like to bake them in the oven. Boneless skin, grilled chicken, on the skin, for me, is ideal for grilling, but for boneless skinless chicken breasts, I really prefer to bake them and they come out so moist, very juicy and tender, and I just didn't want to dream to cook for this particular recipe in any other way! We don't know, and frankly, we don't care if this is a "good thing" or a "bad thing," but we've found that the best boneless skinless chicken breasts have been from Walmart. I do not know? Walmart of all places. But they are simply the best. Always so very juicy and I don't care to know why. We love them and I highly recommend them. Simple as that. The art is not to exaggerate them. I now have baking time and "method" down to a science! Something towards the outside of the pan is always baked faster, so the 2 smallest breasts always go in the middle. The larger breasts not only extend to the outside, but also the thicker sides face the outside. Makes sense, right? Then they all bake evenly and finish at the same time. Not exactly "rocket science", but I'm proud of myself! 😉 Less than half an hour in the oven, fully coated with sauce, then topped with bacon and cheese and baked until melted and done! One of the simplest meals I make by far, but delicious every single time and always appreciated!

I wanted mine to be decked out, but the hubs would have his "plain and simple" this time around. Fresh out of the oven and ready to eat!


We inhaled our supper and enjoyed our chicken with my grilled baby potatoes with Italian herbs that I tossed on the grill while the chicken baked! Such a simple yet comforting dinner! Enjoy the weekend everyone!


Serves 4

4 boneless skinless chicken breasts, we prefer them from Walmart

Sweet Baby Ray's original barbecue sauce, enough to fit well

garlic powder

Old Bay spices

coarsely ground black pepper

8 strips of crumbled crispy cooked lean bacon, divided

2-3 cups of shredded mexi blended cheese, Sargento or Kraft works well

4 green onions, cut at an angle


Preheat oven to 350 degrees.

In 13 × 9 sprayed baking dish sprayed / poured 3 triangles with barbecue sauce into the bottom of the bowl, each going in the opposite direction, each other. (Point up, point down, point up, point down.) Place fat-trimmed chicken breasts on triangles by pattern, smaller in the middle, larger toward the outside with the thickest parts facing out. Well-coated tops and sides with more sauce. (We like one lot of sauce! Add to your heart's content!)

Lightly dust each top with garlic powder, Old Bay spices and coarsely ground pepper.

Pop into the oven and bake for 30 minutes. Remove on top with half of the bacon and lots of cheese. Return to the oven and bake for 4 minutes longer. Remove it, sprinkle the rest of the bacon, behind it 1 minute longer.

Remove, garnish with lots of green onions, and enjoy!
