Cheesecake with lemon and passion fruit

  • 500 g of cookies
  • 185 g of melted butter
  • 170 g of lemon jelly
  • 2 teaspoons of lemon essence
  • 1 Teaspoon vanilla extract
  • 375 ml of cooled evaporated milk
  • 250 g cream cheese
  • 4 passion fruit
  • 3/4 cup powdered sugar
  • 3/4 cup boiling water


  1. Process cookies into fine crumbs.

  2. Mix the cookie crumbs and melted butter or margarine and press into a spring lined pan.

  3. Place in the fridge to set up.

  4. Beat cream cheese and icing sugar until smooth and fluffy.

  5. In another container beat the evaporated milk well.

  6. Dissolve the jellies in boiling water and add gelatin to the cream cheese and beat.

  7. Add the evaporated milk, lemon, vanilla and passion fruit and beat.

  8. Pour on the base of cookies and put in the fridge,

  9. Decorate with cream and fruit of choice.


If you want you can decorate it with cream and fruit.
