Cheese Tarts with Onion and Bacon

Cheesecakes and pastries are all the hype right now. We see them everywhere. They all love them. And they are ridiculously easy to do. So why not try it?

This dish is even better the next day, so if you come across leftovers (which you're not going to do), just pack up for lunch at work. And it's also frugal, requiring only basic pantry and refrigerator ingredients.

Start by assembling your ingredients. Of course, I did not end up using all the ingredients in the image, since the recipe I had was made for a full-size cake. If you are making mini cakes, like me, follow the recipe below. If you go for a full-size tart, just add one more egg (3 total), a little more bacon, sour cream, and grated cheese, and voila!

We will need a basic cake base, which you can buy pre-made or make by yourself (see recipe below). For the filling, we'll need some bacon (I used to cut it finely; you can skip the bacon for a vegetarian version too, but still just as delicious), some caramelized onions, chopped chives, two eggs, some grated cheese and parmesan, and sour cream.

Spread the crust of the cake and cut it into circles. I used a martini glass for the size, as the circle should be big enough for the bottom and sides of your tart model. Grease your tart model with oil or butter, then place the crust on the models, making sure to press it sideways, to make a good tart shape.

Once your model is covered in cake crust, proceed with the fillings. To make the cream and cheese mixture, first beat the eggs in a bowl. Add the seasoning (pepper and a pinch of salt), chives and sour cream. Whisk gently to achieve a light cream mixture. Finally, mix the grated cheese and the Parmesan.

Add bacon bits and caramelized onion to bottom of tarts, then pour over cream-cheese mixture. Fill it to the brim.

When the cakes are assembled, place the model in a preheated oven and bake at 190 ° C for about 20-25 minutes or until a beautiful golden color, as shown below. If you are not sure if your cakes are baked, just stick a toothpick, it should come out clean. Let the tarts cool for at least a couple of minutes, and then serve with a large leaf salad.

  • a handful of bacon
  • 1 large onion
  • 2 eggs
  • 90 ml sour cream
  • 70 g of cheese
  • 10 g of parmesan
  • a pinch of black pepper
  • 1 tablespoon of chives

Instructions

  1. For the tart dough: sift the flour into a bowl and make a well in the center. Cut the butter into small pieces and place it on the flour. Sprinkle with a pinch of salt and add water to the well. With your hands, start mixing gently, but quickly. Knead the ingredients into a dough, form a ball, cover with aluminum foil, and place in the refrigerator to reheat for at least an hour (or overnight).
  2. Peel and cut the onion into thin slices. In a frying pan, heat a little oil and then add the onion slices. Stir frequently until the onion becomes translucent and begins to brown, then lower the heat, cover the pan, and continue to fry and stir occasionally for about 15-20 minutes, until the onions caramelize (brown, but do not burn). and be sweet to taste).
  3. Preheat the oven to 190 ° C.
  4. Grate the cheese and parmesan, finely chop the chives and cut the bacon into small pieces (or use pre-cut).

  9. Once baked, let it cool for at least a couple of minutes, then serve with a large leaf salad.

This is a recipe for omnivores. Skip the bacon for a vegetarian version.
