Cheese snacks and a cheesy treat!

Did you know that October is CHEESE MONTH? Cheese plates, cheese boards, cheese and crackers, cheese toppings, melted cheese, gooey cheese, however if you like to eat your cheese I am in favor.

With just a slice of cheese and a few snacks from the fridge and pantry, you can create a fun meal for any occasion. Sometimes my cheese boards are fancy, and other times they're just as casual as a paper plate with cheese, crackers, grapes, or apple slices.

Unless I'm planning something for a special occasion, my cheeseboards are usually a random variety of odds and pantry ends. (See above for not-so-glamorous evidence.)

When I partnered with the American Dairy Association Mideast to share this post with you, they offered to send me some of the award winning Swiss Cheese that Pearl Valley has been making since 1928.

If this cheese is available in your area, buy it. I'm not even kidding. We enjoy it with our cheese plates, but it also melts like a dream in sandwiches and sauces. My challenge for you, with this post, is to see what you can create using food that you can already have at home. If you want to buy some things in the store, do it, but in the end? Cheese plates and boards don't have to be expensive.

What is your favorite cheese? You have one? Mine changes daily and on a whim, so while today's favorite might be an extra strong cheddar, tomorrow's might be a mild brie or Swiss. When I make sandwiches, I tend to look for Pepper Jack, Swiss, or provolone more often.

In fact, we have a DIY cheese container in our fridge (pictured above). Because the small shelf drawer that came with the refrigerator was not large enough, I used an old plastic dishwasher container and placed it on the shelf. #reallife Glides perfectly into space and there is never a shortage of cheese in our home.

When you often buy your cheese at Costco, it helps to have plenty of space to store everything.

My kids love making their own cheese plates for both snacks and full meals. (They made their own plates for the collage photos here.) Cheese plates really don't have to be fancy. Everything will be delicious, however, you do it because CHEESE is incredible.

And in case you didn't already know, natural cheeses like Cheddar, Monterey Jack, Mozzarella and Swiss contain minimal amounts of lactose because most of the lactose is removed when curds are separated from whey in the cheese making process . So for lactose intolerant, these cheeses are actually an excellent source of calcium.

To make your own cheese dishes, just put everything on the counter and let people do it. We have seen some very interesting flavor combinations created over the years. And my boys also came up with some tasty favorites.
