My husband recently bought a good mountain bike and has been hanging out with his brother on these rad looking mountain bike trails, and in true "little sister" fashion, I wanted to join in the fun.
My husband is delighted that I am joining him, of course. SAY AH!
We are basically in different worlds when it comes to our skill level. I'm a very newbie, but I'm having fun nonetheless.
However, on the last trip I made, I had a pretty hard fall.
I thought it would be a good idea to go down a sandy bed. My bike went on one side and my body on the other. I landed on some rocks and got quite injured, but I jumped back onto my bike and finished the trail.
Then I went home and quickly consoled myself with these cheese pretzel sticks. Because nothing makes you feel better after a fall than carbs and cheese.
These pretzel sticks are incredibly easy to make. In fact, I made them in less than 20 minutes!
Just lay out some Pillsbury pizza dough and cut it into 8 equal rectangles. I used strong cheddar cheese inside, but you can use any of your favorite cheeses there. I bet a good pepper jack would be fun!
PRO TIP: Make sure you don't over-stretch the dough, as the cheese may ooze out while baking.

Cheese pretzel sticks
These cheese pretzel sticks are soft pretzels filled with melted cheese and are simply 5 simple ingredients !!

Ingredients
- 1/3 cup baking soda
- 1 tube (13.8 oz) Pillsbury pizza dough
- 8 cheddar cheese sticks * see notes
- 1 egg
- 2 tablespoons of coarse salt
Instructions
- Preheat oven to 425 degrees F.
- Bring a pot filled with 2 quarts of water to a boil and slowly add the baking soda. Keep on low heat.
- Meanwhile, spread the pizza dough on a lightly greased baking sheet and cut it into 8 equal-sized rectangles. Cover each rectangle with a cheddar stick and fold the dough around the stick, making sure to close the seams. Try not to let the dough stretch too thin or you could ooze cheese when baking.
- Use a slotted spoon to quickly dip the cheese sticks in the boiling water, and then place them back on the baking sheet.
- Beat an egg with 1 tablespoon of cold water and spread the top of each bar with the egg mixture. Sprinkle with as much coarse salt as you like. Bake 10 to 12 minutes, or until tops are golden brown. Let cool a little before enjoying!
Notes
* I used a 1 pound block of sharp cheddar cheese to cut my own cheese sticks. I cut them about 1/2 inch thick at the short end of the cheese block, so that they fit well into the dough.
