This unbaked strawberry cheesecake only took a few minutes to whisk and stays in the fridge until ready to serve. It will set up after a few hours, but it's 100 times better if you can let it refrigerate overnight. A lot of moderation is needed, but it's worth the wait!
The secret to making this super light and fluffy unbaked strawberry pie is evaporated whipped milk. Have you ever beaten evaporated milk? It's so easy and it really makes this cheesecake shine! When whisking evaporated milk, make sure the can is cold and use a large bowl. The evaporated milk expands a lot when whisking.

1 (3 oz.) Package strawberry gelatin or (0.30 oz.) Strawberry gelatin sugar-free
1 cup boiling water
1/4 cup frozen strawberry daiquiri mix, thawed
1 (8 ounce) package cream cheese, softened
1 cup of sugar
1 teaspoon of vanilla
1 can (12 ounces) evaporated milk, chilled
3 cups graham cracker crumbs
5 tablespoons of powdered sugar
12 tablespoons butter, melted
Dissolve the gelatin in boiling water. Add the strawberry daiquiri mix. Let cool.
- Beat the cream cheese, sugar and vanilla. Add gelatin and mix well. Beat the evaporated milk and mix with the gelatin mixture.
Mix the graham cracker crumbs and powdered sugar with butter. Press into the bottom of a 9 "x13" plate. Pour the filling. Chill overnight before serving.
