If you've been following my blog for a while, you probably know that I enjoy traveling. I love to experience new cultures or even just new regions, and immerse myself in the foods the locals eat.

But I would be lying if I said I don't like going home and going back to my routine.

Especially in the fall, when it's cold and being home is cozy! For me, there is nothing more welcoming / comforting than spending a cold afternoon in your pajamas with a bowl of homemade soup and a good movie.

This easy cheeseburger soup recipe is perfect when you think of comfort food.

Cheeseburger Soup Recipe

This soup is an excellent blend of flavors and includes everything you will find in a classic burger. Ketchup, mustard, cheese, and even Worcestershire sauce (which I always add to my burgers). Onion, tomato, and dill pickles are a must for me on a burger, so I use them as a garnish for this soup.

Cheeseburger Soup without Potatoes

I make my cheeseburger soup without potatoes, but you can use it instead of pasta if you want.

To make hamburger soup with potatoes:

  1. Peel and cube 2 potatoes.
  2. Add the potatoes to a medium saucepan and cover with cold water 2 to 3 inches.
  3. Cover the saucepan and bring to a boil.
  4. Lower heat to non-boiling, then cook with lid ajar until potatoes are tender, about 5 to 7 minutes.
  5. Drain the potatoes and add them to the soup when you have added the pasta.

Cheeseburger and cauliflower soup

If you want to cut the carbs a little in this soup, you can skip the pasta and instead make a cauliflower burger soup!

To make a cauliflower burger soup:

  1. Wash and chop 3 cups of cauliflower flowers.
  2. Add cauliflower to a medium saucepan and cover with cold water for 2 inches.
  3. Cover the saucepan and bring to a boil.
  4. Lower the heat so that it does not boil, then cook with the lid ajar until the cauliflower is tender, about 5 minutes.
  5. Drain the cauliflower and add it to the soup when you have added the pasta.

Bacon and Cheese Burger Soup

My recipe doesn't include bacon, but if you prefer a cheeseburger and bacon over a cheeseburger, this is an easy fit!

To make cheese and bacon burger soup:

  1. Cook 4 slices of bacon in the pot you will use to cook the soup. I use beef bacon or turkey bacon; If you use turkey bacon, cook it in a drizzle of olive oil.
  2. Remove the bacon once it is crispy, shred it and set it aside for garnish.
  3. Continue with the recipe, cooking the ground beef and vegetables in the pot in which you cooked the bacon.
  4. Sprinkle the crumbled bacon on top when serving the soup.

This cheeseburger soup recipe has all the flavors of a classic burger (including pickles), but in soup form, making it a comfort food perfect for cold weather.

  • Cook pasta al dente according to package directions; drain and set aside.

  • Heat the oil in a 5-quart pot over medium-medium-high heat. Add meat, onion, and celery, and cook (uncovered) until meat is browned and vegetables are tender but not browned, about 8 to 10 minutes, stirring occasionally. Lower the heat to medium and add the carrot, tomato, and garlic and cook 2 more minutes, stirring frequently.

  • Add flour and cook 30 seconds, then add milk, water, ketchup, mustard, Worcestershire, salt, and pepper. Cook (uncovered) over medium heat until simmering. Turn off the heat and add the cheese and then the pasta.

  • Serve covered with any garnish you want.
