Cheese and cheese dip with slow cooker

It's almost New Years and I wanted to share this amazing Mexican Slow Cooker Cheese Salsa Recipe that my husband made for all of us this weekend. The husband has also been a bit obsessed with my new clay pots, ha ha! In fact, he bought one of the new slow cookers I received for Christmas. So I think he was a little insistent on proving that his gift he bought for me was better than the others I received.

For years he always made a delicious Cheesy Chili Bread Bowl for all our entertainment during the holidays. It always seemed to be a success. It seems that everything made with Velveeta is so tasty. This year, for some strange reason, he said he refused to do it and wanted to do something a little different. To be honest, he was quite upset. I honestly couldn't just "trust him" that this cheesy new salsa creation was going to be as good as his normal salsa. Well I had to admit defeat as this new Slow Cooker Cheesy Mexican Dip was perfect! I think I will prefer this recipe to your traditional cheese and chili bread bowl creation. Although I'm considering making him do both so he can do a taste test, ha ha! Yes, I just want you to make more of this delicious sauce for New Years!

Ingredients: 1 pound ground beef 1 chopped onion 1 teaspoon minced garlic 2 pounds Velveeta 2 tablespoons minced jalapeño peppers 1 tablespoon taco seasoning 2 10-ounce cans Rotel Tomato & Chiles 1 bunch green onions (optional)

Addresses: Brown the ground meat and cook with onion and garlic. Drain off the fat. Add 1/4 cup of water. Add jalapeños and taco seasonings. Stir and cook over medium heat for 10 minutes. Transfer the mixture to the clay pot. Cut Velveeta into cubes and add to the clay pot. Add the Rotel tomatoes to the clay pot. Simmer for 1 hour and reduce to warm. Cut the green onions into thin slices for garnish. Serve with tortilla chips.

After noticing all the delicious ground beef, jalapeño, and tomatoes, I started to agree that maybe this new sauce would be great. I really like a Cheese Dip and the addition of the ground beef really put this cheese sauce to another level. I really liked the spice in this one too. Not too much but a great bite! Quick, easy, and great to throw in the clay pot to take to a party too!

My kids are pretty picky and they actually LOVED this dip. I will notice that they were digging for meat and cheese and skipping the tomatoes and peppers (the kids just don't get it, hahaha). I'm thinking the husband enjoyed showing off the new slow cooker he bought for me, ha ha! Hopefully he wants to continue as he is definitely a great cook.
