- 1 bunch of white celery
- 3 large potatoes
- 2 pieces of leek
- 1 large onion
- 2 pounds of water
- 30 milliliters of extra virgin olive oil
- 1 red apple
- 4 small town loaves of about 10 or 12 centimeters in diameter with hard crust
- 1 pinch of salt
- 1 pinch of pepper

With potatoes peeled and diced and green leek leaves we make a broth cooking them in the two liters of water for about 40 minutes until the potato is soft.
While the broth is being made, we cut the celery into pieces (reserving a twig for the final decoration of the purifying broth), and the leek and the onion in julienne, and we poach it all together in a frying pan with a little oil over medium heat / low for about 20 minutes minimum.
When the potatoes are ready, remove the green leaves from the leek with a slotted spoon, add the poached vegetables to the pot and let it boil for another 5 minutes.
Trick: If necessary you can add more water to the celery and onion soup. We always make sure that it has not evaporated too much.
Pour the cleansing caldio of celery, onion and leek in a mixer or blend all with a turmix until you get a smooth cream. Add a pinch of salt and pepper to taste and mix again. Strain through a Chinese or fine metal strainer so that the cream of celery and leek do not have lumps since these vegetables are very fibrous.
