I am happy that the cauliflower is having a star moment right now. From cauliflower steaks to roasted cauliflower soup, this vegetable can transform into almost anything! But when the cauliflower pizza doughs became something, I knew I had to make a version of my own.

While you can buy pre-made cauliflower pizza crusts, cornstarch or potato starch tend to be the main ingredient in these products. So by doing it yourself, you know that your crust is made from fresh ingredients with no unnecessary additives.

Cauliflower pizza crust ingredients

Yes, this pizza crust requires only 3 main ingredients, plus seasonings. This is what you will need:

  • Cauliflower – you will need around 1.5 pounds of cauliflower florets (I've detailed the different types of cauliflower in detail below)
  • cheese – you can use a variety of cheeses, but this is the general rule:
    • 1/2 cup of grated cheese (mozzarella, parmesan, etc.)
    • 1/3 cup soft cheese (goat cheese, etc.)
  • Egg – 1 beaten egg
  • Italian seasoning – 1 teaspoon of Italian seasoning, but don't hesitate to use additional spices
  • Salt and pepper – try

Types of cauliflower to use

There are several options when it comes to making cauliflower rice. You can make it with fresh cauliflower, frozen florets, or buy it pre-cooked. But if you're wondering which type of cauliflower is best to use, here is the answer. After trying all three variations, the consistency was more or less the same for each one.

I know that precooked cauliflower may not be available to many people. So choosing between fresh cauliflower and frozen florets, frozen florets require the least amount of work (no cutting or cooking required). Therefore, it quickly became My favorite method

Here is a breakdown of how to prepare each type of cauliflower:

Fresh cauliflower

If you use fresh cauliflower, you will need 1 large head of cauliflower (about 2 pounds, which produces 1 1/2 pounds of florets).

  • Remove foil from the head of the cauliflower, and cut them into pieces of uniform size.
  • Grate foils using the grater attachment on a food processor or box grater.
  • Microwave cauliflower rice for about 4-5 minutes to soften it.
  • Drain the cauliflower rice using a bag of nut milk and squeeze until all the moisture comes out.

Frozen cauliflower florets

You will need 1 1/2 pounds of frozen cauliflower flowers.

  • Thaw frozen cauliflower in the fridge overnight.
  • Grate foils using the grater attachment on a food processor or box grater.
  • Drain the cauliflower using a bag of nut milk and squeeze until all the moisture comes out.

Pre-Riced Cauliflower

You will need approximately 5 cups of precooked cauliflower.

  • Microwave cauliflower rice for about 5 minutes to soften it.
  • Drain the cauliflower using a bag of nut milk and squeeze until all the moisture comes out.

How to make cauliflower pizza

Now that you have your cauliflower ready, here is the complete recipe on how to make the crust. Watch the video tutorial below to see how I do it step by step!

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Grate cauliflower flowers to make cauliflower rice, using a food processor or box grater.
  3. Microwave your cauliflower for about 5 minutes to soften it. Alternatively, you can sauté the cauliflower for 10 minutes over medium heat on the stove.
  4. Drain the cauliflower. Transfer the grated florets to a walnut milk bag or a dish towel. Squeeze the cauliflower until all the moisture comes out. Make sure to let the cauliflower cool down a bit before squeezing it so you don't burn your hands!
  5. Mix cauliflower with rice, cheese, egg, and seasonings. Using your hands, mix everything together in a large bowl until everything is combined.
  6. Shape your pizza dough. On a baking sheet, press the dough down in an even circle. The diameter should be approximately 9 inches.
  7. Bake for 25 minutes. If you started with cauliflower frozen, you may need to cook a few more minutes. Then remove from the oven.
  8. Add the ingredients. Then put the pizza back in the oven for an additional 10 minutes.

Pro tip: If you want your cauliflower crust to be as crispy as possible, bake on a pizza stone instead of a baking sheet.

Now comes the fun part: pizza toppings! One thing I will notice here is that thicker is better. You don't want your ingredients to be too oily or dripping, otherwise it will make your crust even wetter.

In terms of flavor, the combinations are endless. But, I have decided to prepare two of my favorite flavors: chicken with pesto and Daisy flower Pizza. You can find the complete recipes below, but here's a quick rundown of the ingredients you'll need.

How to Freeze Cauliflower Pizza Dough

If you want to prepare meals during the week, frozen pizza doughs will be your best friend. Once the crust has baked, let it cool, then place it in an airtight container or freezer bags.

Because a large 9-inch round pizza is more difficult to store, I recommend making two smaller crusts and stack them on top of each other, with parchment paper in the middle. Even better, duplicate this recipe and make 4 little crusts for the future. They will last up to 3 months in the freezer.

When you're ready to make your pizza, simply remove it from the freezer and reheat it in the oven. Bake at 400 degrees Fahrenheit for 5 minutes to thaw, then add your ingredients and bake for an additional 10 minutes or until fully cooked.

  • Remove the cauliflower flowers from the stem or use frozen and thawed cauliflower flowers. Grate them with a food processor or box grater.

  • Add the cauliflower rice to a microwave safe bowl, cover and microwave for 4-5 minutes to soften. Alternatively, you can sauté the cauliflower rice in a skillet over medium heat on the stove for 8-10 minutes. Then let it cool to the touch.

  • Transfer the cauliflower rice to a bag of walnut milk or a thin kitchen towel. Drain the cauliflower by squeezing until all excess moisture comes out. Squeeze as hard as you can!

  • Place the drained cauliflower rice in a large mixing bowl. Add cheese, egg, and seasonings. Use your hands to mix everything together to form the pizza dough.

  • On a parchment-lined baking sheet, press the dough into an even circle. The diameter should be around 9 inches. If you have a pizza stone, that's even better and it will produce a crispier crust.

  • Bake for 25 minutes, or until lightly browned, then remove from oven. You can also bake for 20 minutes and flip the crust, then bake an additional 5-10 minutes for an even crunchier crust.

  • Add ingredients and bake for an additional 10 minutes.
