Cauliflower was never my favorite until recently. I think it's easy to discard foods that you don't think you like because you haven't eaten them in a long time or have never eaten them in a way that you enjoy.

Lately I've been experimenting with cauliflower and trying to find a recipe that I like, as many people seem to love it.

Putting cheese on anything will generally do the trick and that was definitely the case this time.

Cauliflower Mac and Cheese

The most important thing in this recipe.

is to squeeze the cauliflower as much as possible.

If you leave too much water inside, it will have a soggy taste and nobody likes macaroni and cheese and soft pasta.

I've found that the drier you can get cauliflower, the less it tastes, well … cauliflower.

Other than that, it is very simple.

You don't even have to make a flour roux for this cauliflower mac and cheese.

It's similar to making spinach with cream, just cheese, cheese, and more cheese!

I used a mixture of cheddar cheese, cream cheese, and muenster for this dish.

I usually only use cheddar and cream cheese, but I found that the muenster gave it a little more depth and creaminess.

To fill the plate more like a meal, I added jalapeño slices and spinach.

It's super rich, making a large salad a great addition to this meal.

It is definitely a comforting meal with a twist for me that I can't wait to make for my family again.

  • 1.5 pounds frozen cauliflower

  • 1/2 medium onion, diced

  • 3/4 cup heavy cream

  • 3 oz cream cheese

  • 1 teaspoonful of dijon mustard

  • 1/2 Cup of Muenster cheese, cubed

  • 1 1/2 cups cheddar cheese, grated

  • 1 cup of fresh spinach

  • 2 sausages, sliced ​​and browned

  • 1 teaspoon of seasoned salt

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon fresh garlic, minced

  • 2 teaspoons of olive oil


  1. Preheat oven to 375 degrees.
  2. Steam or boil cauliflower until tender and crisp, drain
  3. Remove excess water by squeezing cauliflower on a towel or rubbing in moisture, set aside
  4. In a frying pan over medium heat add the olive oil and sauté the onions until they are soft
  5. Add thick cream to skillet, lower heat and simmer
  6. Break the cream cheese into small pieces and add to the pan, stirring quickly.
  7. Add fresh spinach, sausages, mustard and fresh garlic, pepper and salt to the pan
  8. Once all cream cheese is smooth, remove skillet from heat
  9. Combine the cream mixture with muenster cheese and 1 cup cheddar cheese
  10. Stir quickly with a spatula until smooth and add cauliflower
  11. Place in 8 × 8 baking sheet and top with remaining 1/2 cup cheddar cheese
  12. Bake at 375 for 15-20 minutes until simmering and cheese is golden.
