  • 5 medium carrots
  • 1 onion
  • 1 teaspoon of rosemary
  • 1 teaspoon of miso paste
  • 2 cloves of garlic
  • 1 cup of water (240 milliliters)
  • ½ cup white wine
  • 1 tablespoon of wheat flour
  • 1 pinch of salt
  • 1 pinch of pepper
  • 2 tablespoons of oil

Steps to follow to make this recipe: 1

Cut the carrot and onion diced, and cut the garlic into slices.


Heat the oil in a saucepan and sauté the onion and garlic a little. Add the carrot and cook 2 minutes over medium heat, stirring occasionally.


Add the wine, a pinch of salt and pepper and the rosemary and cook until carrot is soft.


Then add the flour and stir quickly to dissolve the lumps. Gradually add the water, stirring continuously until the desired texture is obtained.


Grind the sauce, carrot and onion sauce in the mixer or with a miniprimer until creamy. Add the miso paste and stir with a spatula. The miso paste should not be boiled, therefore we add it at the end when the sauce has cooled down a bit.
