Carrot and mango smoothie recipe

Shortly after purchasing my Blendtec blender, I was flipping through the attached cookbook and saw a recipe for carrot juice. How bad can it be, right? They are just carrots and water.

Guess what it tasted like? Carrots and water Yes. Shocking, I know. But not as tasty as I thought it would be.

So it got me thinking, was there any way to drink carrot juice that wasn't, okay?

Can you put carrots in a smoothie?

Of course! I use 1 cup of frozen carrots in this smoothie, but you can also substitute 1 cup of grated fresh carrots.

And then I was also thinking about how sometimes unripe mango tastes like carrot. And then maybe they belong together.

  • 1 ½ cups of orange juice
  • 1 medium banana
  • 1 cup mango chunks (thawed if frozen)
  • 1 cup frozen carrots
  • Combine all ingredients in a blender in the order listed. Mix until smooth.
