Today’s recipe is a quick one that uses carne guisada (which I recently shared) in taco; perfect for Cinco de Mayo! I like to eat carne guisada like a chili or stew, but it is also good in taco! Just warm carne guisada and tortillas, add your favorite taco filling and enjoy without utensils! I like to keep my tacos nice and simple with things like fresh diced onion, coriander, lime juice avocado and maybe a dash of cheese (queso fresco or feta) and avocado, but I also change things up depending on mood and what I have available .

ingredients
  • 12 small corn tortillas, warmed
  • 1 pound carne guisada (warm)
  • 1/4 cup onion, dice
  • 1/4 cup queso fresco, crumbled
  • 1 avocado, sliced
  • 1 tablespoon coriander, chopped
  • 1 lime, sliced
directions
  1. Gather tacos, squeeze in some fresh lime juice and enjoy!
