Caramel-Filled Chocolate Chip Cookie Bars

When it comes to chocolate desserts, there is nothing better than this! These caramel chocolate chip salty cookie bars have so many layers of goodness that you must try them to believe them!

Ingredients

Ingredients of chocolate chip cookie bars:

  • 2 1/4 cups flour
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon salt
  • 3/4 cup melted, chilled unsalted sweet cream butter (12 tablespoons)
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons of vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 12 ounces of square caramel candies (about 3/4 of a 1 lb bag, unwrapped)
  • 4 tablespoons thick cream

Chocolate ganache ingredients:

  • 1 cup thick whipped cream
  • 1 bag of 12 ounce mini chocolate chips bag

Instructions

To make the chocolate chip cookie bars:

  1. In a medium bowl, mix together the flour, baking soda, and salt. Set aside.

  2. Using a stand mixer or hand mixer, mix the melted butter and sugars on medium speed until combined.

  3. Add the egg, egg yolk, and vanilla extract and mix until combined.

  4. Slowly add dry ingredients to batter with mixer on low speed. Stop when the mixture has combined to avoid excessive knocking.

  5. Add the chocolate chips by hand.

  6. Add caramels and heavy cream to a medium saucepan over medium heat. When the caramels begin to melt, mix the mixture until smooth, about 2 minutes.

  7. Press half of the cookie dough onto a prepared 9 × 13 "baking sheet (using parchment paper), smoothing the top with a spatula.

  8. Pour the hot caramel over the cookie dough and spread it in an even layer, leaving about ½ inch around the edge, so you can seal the candy inside with the top layer of cookie dough.

  9. Spoon the remaining cookie dough onto the caramel and gently roll out the dough with a spatula until the caramel is covered. Start from the outside and work your way to the middle to help seal the caramel.

  10. Bake for 30 minutes at 325 ° F, or until the top of the bars are light golden.

  11. Place the pan on a wire rack and cool to room temperature, then refrigerate for about 30 minutes to allow the caramel layer to settle.

To make the chocolate ganache:

  1. Using a small saucepan, heat the whipped cream until it begins to simmer.

  2. Add 1 bag (12 ounces) of mini chocolate chips to a medium bowl. Pour the hot whipped cream over the chocolate chips and let sit for a minute or two. (We use mini chocolate chips for this step because they melt more easily.)

  3. When the chocolate begins to melt, mix with hot cream until smooth.

  4. Pour the chocolate ganache over the cookie. If necessary, use a spatula to smooth and distribute evenly.

  5. Optional: Melt a small amount of caramel using the same technique as above in the cake instructions. Sprinkle the caramel over the chocolate ganache and run a knife through the caramel to make it swirl.

  6. Place in the fridge for an hour to allow the ganache to settle.
