  • 1 package vegan cannelloni pasta
  • 1 cauliflower
  • 1 carrot
  • 2 mushroom
  • 1/2 cup of crushed tomato
  • 1/3 cup of grated cheese (I have used vegan cheese)
  • 1 tablespoon of oil
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 pinch of oregano

Steps to follow to make this recipe: 1

Cut the stems of the cauliflower and reserve them for other preparations. You're only going to need cauliflower flowers. Place them in the mixer and shreds until obtaining the texture similar to the couscous semolina.


It stings very finite onion, carrot and mushrooms. Heat a frying pan with a little oil and sauté the vegetables until soft. Add the cauliflower couscous to the skillet, season with salt and pepper, and sauté for 1-2 minutes, stirring occasionally. The filling of the vegan cannelloni is ready.


If required, cook the cannelloni pasta following the instructions on the package. I have used the pre-cooked pasta that does not require pre-cooking.


Fill the cauliflower and vegetable cannelloni. Place them on a cookie sheet or pan in a row and top with a little tomato sauce and grated cheese. Remember that cheese must be vegan if you follow a diet free of products derived from animals.


Preheat oven to 180 degrees. Bake the cauliflower cannelloni for 30 minutes, or until ready.
