- 1 package vegan cannelloni pasta
- 1 cauliflower
- 1 carrot
- 2 mushroom
- 1/2 cup of crushed tomato
- 1/3 cup of grated cheese (I have used vegan cheese)
- 1 tablespoon of oil
- 1 pinch of salt
- 1 pinch of pepper
- 1 pinch of oregano

Cut the stems of the cauliflower and reserve them for other preparations. You're only going to need cauliflower flowers. Place them in the mixer and shreds until obtaining the texture similar to the couscous semolina.
It stings very finite onion, carrot and mushrooms. Heat a frying pan with a little oil and sauté the vegetables until soft. Add the cauliflower couscous to the skillet, season with salt and pepper, and sauté for 1-2 minutes, stirring occasionally. The filling of the vegan cannelloni is ready.
