We put a saucepan with plenty of oil to heat on very low heat so that the oil does not bubble. If you have a thermometer to monitor the temperature, the ideal thing to make the candied artichokes is that the oil is around 80 ºC.
We wash the artichokes, remove the leaves from the outside until they reach the heart, cut the tips and clean the hairs. They can be left whole or cut into pieces.
As we cut the artichokes, we put them in the saucepan with the oil. They must be completely covered for them to be done well. Once inside, we leave confit artichokes for 40-60 minutes, depending on its size. After the first 20 minutes, we puncture them to see if they are tender or need more time.
When they are, we let them cool and they will be ready to eat. If we want, we can keep them in glass jars with their oil. How to make canned candied artichokes
Once the artichokes are confit in oil, to preserve them simply put in glass jars, covering them completely with the recipe oil. These jars can be covered and reserved in the refrigerator for weeks, as they hold up quite well. However, if we know for sure that it will take months to consume them, we recommend doing the following:
- Close the jars tightly, with the artichokes candied in oil inside, and place them in a pressure cooker.
- Add water to reach about 5-8 cm from the jars, close the pot and heat it for 10 minutes. Ideally, it should reach around 116ºC.
- Carefully remove the jars, allow to cool and store them in a place free of moisture.
Another option for making homemade preserves is to heat the filled and closed jars in a pot with boiling water for 5-10, without the water reaching the lid.
