It’s Memorial Day today and summer has officially arrived with all its fun and sun. What better way to greet the fiery brute than a refreshing, icy pitcher of calamansi juice?
You can cut through the steps by simply stirring the sugar into the calamansi mixture, but I like to take the extra effort by making simple syrup for use in my fruit juices. As we all know, sugar does not dissolve very well in cold liquids and usually just settles to the bottom. Heat it in equal parts water until completely dissolved, ensuring that your next glass of calamansi juice is beautifully sweetened. Enjoy!

- 3/4 cup sugar
- 4 cups of water
- 1 cup of calamansi juice
- In a saucepan, heat the sugar and 1 cup of the water with stirring occasionally until the sugar has dissolved. Let it cool.
- Extract juice from calamansi and crate seeds and skin.
- In a jug, combine calamansi juice, simple syrup and the remaining 3 cups of water. Stir well together. Refrigerate in fridge for a few hours or serve over ice cream.
