I think most of the country is experiencing a cold snap this week and those cold temperatures make me crave a hearty, low-carb, comforting meal like this instant cabbage roll soup. It is a mixture of tender cabbage, abundant ground meat, and a mixture of carrots and onions, cooked in a tasty tomato broth.

What's in the cabbage roll soup?

Basically it is a roll of unfilled cabbage simmered in a tasty tomato-based broth. The ingredients include:

  • Ground beef
  • Chopped onion
  • Garlic
  • Cabbage
  • Chopped tomatoes
  • Ketchup
  • Meat broth
  • Carrot
  • Worcestershire sauce
  • Apple cider vinegar
  • Spices: Parsely, oregano, bay leaf, salt and pepper.

How to make cabbage roll soup in an instant pot:

  1. Set the instant pot to sauté and add the ground beef, browning for 7-10 minutes. Drain the fat and reserve.
  2. Add olive oil, onion, and garlic to the instant pot and sauté for 5 minutes. Press CANCEL to disable skip mode.
  3. Place ground beef, cabbage, diced tomatoes, tomato sauce, beef broth, carrot, Worcestershire sauce, bay leaf, parsley, oregano, apple cider vinegar, salt and pepper, in the instant pot with the onions and garlic.
  4. Lock the cap in place and turn the valve to SEALED.
  5. Adjust to HIGH pressure for 15 minutes.
  6. When the timer goes off, press CANCEL and allow the instant cooker to release naturally for 5 minutes before turning the valve to VENTILATION and releasing the remaining pressure.
