It's mid-July and I was looking for a quick and easy low carb summer salad to enjoy. So, I picked up a bag of previously grated cabbage during my last trip to the grocery store.

To save time, I used the bagged cabbage that was already grated. You can always pick up a cabbage head and make it yourself. I also like the pre-cut type for making a simple Thai chicken salad.

I prefer to make this quick and easy recipe for low carb cabbage salad without carrots. As most of us know, carrots contain plenty of natural sugar. Leaving them out reduces the carbohydrate count.

To save even more carbs, I use liquid stevia extract that has zero carbs. Unfortunately, most coleslaw dressings add sugar.

How to make cabbage salad friendly

You will need about 4 cups of grated cabbage for the recipe. This is equivalent to a 1 pound bag of previously grated cabbage. But I like to shred mine using the mesh blade of my food processor.

Make the salad dressing

To keep carbohydrates to a minimum, it's always best to make your own low-carb dressings at home. That way you will also know that there is no unnecessary added sugar.

For the cabbage salad dressing, I just use a mixture of mayonnaise, apple cider vinegar, stevia, and ground celery seeds. And I always use raw apple cider vinegar instead of the filtered type.

When making the dressing, be sure to use a carbohydrate-free mayonnaise with no added sugar. My favorite is avocado oil-based mayonnaise. And it is very easy to make your own mayonnaise at home.

For the homemade mayonnaise, you can see my coconut oil mayonnaise. Coconut oil makes mayonnaise a little hard from the fridge, so if that bothers you, use avocado or olive oil.

Completing the salad

To finish the salad, simply pour the prepared dressing over the grated cabbage. Then stir to coat evenly.

If you like the more traditional coleslaw, you can certainly add some grated carrots. You won't add too many carbohydrates as long as you use them in moderation.

Although you can eat it right away, it is best to serve it cold. So put it in the fridge for a couple of hours before serving.

Carbs in coleslaw

Most of the carbohydrates in this cabbage keto salad are from cabbage. However, there is no need to worry because they are mainly fiber.

There is some natural sugar contained in the cabbage. Each leaf has approximately 1.3 grams of carbohydrates of which 0.6 grams are fiber and 0.7 grams are sugar. But that is not enough to get you out of ketosis.

Serving ideas for coleslaw keto

I like to make a big batch of this low carb coleslaw salad over the weekend. That way, I can eat it throughout the week. It is a great complement for lunch or dinner.

And it's easy to throw in the lunch bag for work. I could eat it almost every week in the summer.

Coleslaw is also a perfect low carb salad to take to an outdoor party or picnic. It goes very well with hamburgers and hot dogs (without the bun, of course). And you can serve it with tuna and egg salad wraps or sandwiches.

Many people forget cabbage as a delicious low-carb vegetable. It seems that cauliflower always attracts attention.

Cabbage is good for more than just a low carb cabbage salad recipe. It can even be used as a sandwich wrap.

As you can see, there is a lot you can do with cabbage. You don't have to limit yourself to a low-carb coleslaw when you buy a bag of pre-grated cabbage.

Although cauliflower seems like the best low-carb vegetable because of its versatility, don't forget cabbage. I have seen many people use it as noodles in cabbage lasagna and in pan dishes. And it is a stable ingredient in egg bowl recipes.
